POTATO SALAD RECIPE

Ingredients:

3 large potatoes
5 hard boiled eggs
1/4 cup finely chopped onion
¼ cup finely chopped green pepper
1 ½ cups mayonnaise
Dried parsley
1/4 teaspoon crushed fennel seed
Dill weed
Salt
Pepper

Boil the eggs until hard and peel - leave to cool. Cut potatoes into quarters and boil until just
beginning to soften (overcook these and your potato salad won’t work) Leave to cool.

Put eggs, potatoes, onion, pepper, mayo, parsley and fennel seed into a large pan and chop
with a knife while slowly mixing the ingredients together. Check for consistency and add more
mayo if its too dry. Add salt and pepper to taste and slowly churn with a spoon. When all
ingredients are evenly mixed, transfer to a bowl and flatten salad. Sprinkle dill weed on the top
and put in fridge to cool for 30 minutes

NB Amounts are approximate and you can add or subtract for taste where necessary
