Enchiladas Hondureñas

Ingredients
ground beef or turkey
potatoes
tomatoes
onions
green peppers
garlic
cilantro
salt
pepper
maseca or tortillas
vegetable/soy oil

Procedure

1. place the ground beef in a bowl and season it with salt, pepper and garlic (and
any other spices of your choice)
2. cut tomatoes, onions and green pepper into small pieces. Simultaneously, you
may want to cut your potatoes (1 or 2 depending on their size) into small
pieces (you can peel them or leave the peel on them. I personally prefer to
peel them)
3. on a frying pan, place a little but of vegetable soy oil and then place the
tomatoes, onions and green peppers for a few minutes for flavors to be
released
4. add the seasoned ground beef/turkey until brown. Once brown, add water (to
cover the beef/turkey) and add cilantro (it gives it a yummy flavor :) Let it boil
for a few minutes.
5. Let the water be absorbed by the beef/turkey and the potatoes become fully
cooked and then mash the beef and potatoes together (makes it easier to
place on the fried tortillas.

Totillas

1. If you buy them already made, just deep fry them in vegetable/soy oil until
they become crispy.
2. If not - Make the maseca mix and make tortillas (I have figured out that thin
tortillas fry faster and better than thicker ones) and then deep fry them as you
usually do.

You’re all set. Now serve with sauce and cheese and ENJOY!
