Economic Growth and Tourism Support Consumer Foodservice


The solid recovery in consumption and the continuous innovative propositions that are being
introduced in the Spanish market were contributing to the positive development of consumer
foodservice in 2018. Spain has a well-established restaurant tradition and culture of going out
and eating out. The positive growth in the Spanish economy in the last few years has led to a
continuous increase in the consumption among Spaniards outside the home. With increased
purchasing power, consumers are gradually shifting away from low-cost options and are looking
for gastronomic options that combine attractive environment and good-quality food.
In addition, tourism growth in Spain continued to set records in 2018. The country confirmed
its position as the second most-visited country after France. The increased tourist flow also
contributed to the positive growth of consumer foodservice as well, especially in the travel and
lodging environment.

Delivery and Increased Presence Online Provide Additional Growth


Opportunities
The internet is playing a greater role in consumers’ daily lives – with foodservice being no
exception to this. New consumer habits, the penetration of social networks in consumers’
lifestyles and new technologies have provided players with access to a bigger potential client
base. Through online platforms and smartphone apps, customers are given the opportunity to
access updated menus, make reservations and order delivery at home. Social networks provide
additional opportunities for growth, as the younger population uses them regularly when
deciding where to go out and meet with friends.
One of the most important trends in consumer foodservice in Spain is the expansion of home
delivery. It is linked to the growing consumer demand for food anytime and anywhere. This trend
is impacting almost all market players and more brands are introducing this option through
development of their own delivery service or by joining the already established delivery
platforms of Just Eat, Deliveroo, Glovo and Uber Eats. These delivery platforms are also
facilitating growth in online orders, which is driving market growth to an even greater extent. The
largest consumer group tending to use delivery services is made up of millennials and
subsequent generations, for which being online is an integral part of their lifestyle. This
development is expected to continue to grow during the forecast period, supported by the
increasing role of apps and online platforms.
The growing interest in food delivery is not expected to affect the visits to physical bars and
restaurants, given the tradition among Spaniards to go out and eat out.

Alsea Is the Biggest Player in the Spanish Market After the Acquisition
of Vips Group
In October 2018, Food Service Project, a company owned by Alsea, acquired Sigla SA, the
owner of Vips Group. This acquisition, which is pending approval by the Spanish Markets
Commission, will make the new group the market leader and main operator of foodservice

outlets in Spain. It will be managing 10 brands in total – Foster’s Hollywood, VIPs, Domino’s
Pizza, Starbucks, Ginos, Burger King, TGI Fridays, LAVACA, Cañas y Tapas and Wagamama.
The acquisition will allow Alsea to diversify its portfolio in Spain, integrating concepts with
those that it did not already have in the Spanish market. This new agreement will also see Zena
enter specialist coffee and tea shop chains by integrating the outlets of Starbucks managed by
Vips in Spain.
The rest of the main players in the Spanish market remain the same, namely McDonald´s,
Restaurant Brands International and Telepizza Group.

Independent Players Continue To Lead, But Chained Operators Are


Growing
Independent players still dominate the foodservice market in Spain. However, the typical
Spanish independent bar or restaurant is facing competition from new and modern
establishments that respond quickly to new consumer trends. This is especially relevant for the
big cities such as Madrid and Barcelona and tourist destinations such as the Mediterranean
coast and the Balearic and Canary Islands. These trends are likely to result in a gradual decline
in the number of traditional independent foodservice establishments and growth in the number
of chained outlets owned by large companies and franchises. One of the main advantages of
these brands is their ability to adapt to new trends because of their international exposure,
helping them to attract new customers through marketing campaigns and well-known brand
names.
The sense of modernity and globalisation is influencing consumers, especially younger ones.
This trend is expected to negatively affect traditional independent players. Nevertheless,
independent operators could profit from the growing demand, especially from the younger
population, for traditional food, locally sourced ingredients and sustainability. In addition, an
online presence provides additional growth opportunities as it provides access to a broader
consumer group.

Good Performance Is Expected To Continue


The continuous improvement in economic indicators, which is reflected in higher disposable
income, coupled with the positive forecasts for tourism growth will have positive impact on
consumer foodservice. The growing consumption will intensify the competition between chained
and independent operators, although the independent ones will continue to dominate the
market.
Healthier food options will continue to shape foodservice in Spain in the forecast period. As
the health trend develops over the forecast period, the leading players in the Spanish market will
continue changing their menus in order to add higher-quality, healthier and more natural
products.
In addition, consumers are being ever more cautious with regard to the preservation of the
environment and sustainability, so foodservice based around locally sourced ingredients will
continue to grow in importance. It should be noted that consumers appreciate value for money
and are prepared to pay more for quality.
Among the other trends that are expected to shape the industry are customisation and
technology. In terms of customisation, customers are demanding an increasingly customised
dining experience. With digitalisation and technology innovation, consumers will prefer to see
the application of self-ordering and self-payment options, especially in the limited-service
environment.

PROSPECTS

Bars Undergoing Modernisation


Continuing the trend of recent years, cafés/bars is still immersed in a process of renewal and
modernisation of concepts. Many of these models had to adapt to the context of consumer crisis
or were developed expressly to deal with that situation (eg Cervecería 100 Montaditos by
Restalia). In the crisis years, it was the successful low-cost philosophy that was used to attract
customers. With the arrival of economic recovery, consumers now value more the experiential
aspect of their visit to any restaurant or bar, albeit without losing sight of reasonable value for
money. Therefore, the channel needed to undertake a modernisation of its establishments, both
in decoration and in offer, in which concepts such as millennial, gastro, foodie or healthy eating
have acquired greater prominence. The traditional tavern is being renewed to fit well in social
networks and incorporate trends such as vermouth or artisanal beers. An evolution that has
been possible thanks to the flexibility of the cafés/bars model, which, despite all its changes, is
still perfectly recognisable by consumers.

the Channel’s “classic” Brands Are Adopting the “gastrobar” Concept


Many of the groups operating in this channel are undertaking an evolution of their brands. An
example of this is the recent launch of Lizarran Gastro by Comess Group. This launch came on
the back of demand from some of its franchisees to have an alternative to its traditional offer of
“pinchos”. Thus, the new format offers toasts and traditional dishes to share. The company is
considering the internationalisation of this concept, as its wider offer could also be favourably
received in foreign markets. In this sense, Comess Group continues to focus on Europe and
America for its international expansion.

Positive Economic Growth and Spaniards’ Going-out Culture Boosts


Cafés/bars
Spain is one of the countries in the world with the highest number of cafés/bars per inhabitant.
This is mainly due to the well-developed Spanish culture of going out and socialising with friends
in these establishments. In the years of economic crisis, consumption outside of the home by

Spaniards contracted. However with the positive growth in the Spanish economy, consumption
outside the home is now increasing again. According to the Spanish Ministry of Agriculture, in
2017 consumption outside the home increased by 3.5% and, for 2018, a further rise of 2.9% is
expected, with 34% of this consumption attributed to bars and cafés. As a result, a strong
performance is expected over the forecast period due to the higher disposable incomes among
Spaniards.

COMPETITIVE LANDSCAPE

Tim Hortons Increases Its Presence in the Spanish Market


Tim Hortons has significantly increased its presence in the Spanish market. In just 12 months,
the Canadian brand, managed in Spain by Restaurant Brands International (owner of Burger
King in Spain), has increased its number of outlets from two to 12 outlets. Tim Hortons aims to
compete with Starbucks by offering lower prices. Restaurant Brands International announced
that it would allocate EUR50 million over five years for the expansion of the brand in order to
“promote the growth of a successful brand” and to fill the gap that still exists in specialist coffee
shops in Spain.

Starbucks Remains the Leader in Specialist Coffee and Tea Shops


Starbucks, the leading player in specialist coffee and tea shops, continued to expand in 2018.
The North American chain is expanding in Spain mainly through the Vips Group (recently

La Sagra Launches the First Artisanal Beer Bar Franchise


La Sagra Brew, the leading craft brewer in Spain, launched its franchise brewery project
under the name "La Sagrada Fábrica". It is the first concept of a franchise in Spain based on
craft beer. The "La Sagrada Fábrica" franchise is a different brewery concept that combines
artisanal beer with quality food. The name comes from its own philosophy, which is embodied in
the phrase "the taste is sacred". The model will be managed in collaboration with the Madrid-
based consultancy Be Franquicia.

Improving Economic Situation Supports the Growth of Full-service


Restaurants
The solid recovery in consumption and the continuous innovative offers that are being
introduced in the Spanish market were contributing to the positive development of full-service
restaurants in 2018. Spain has a well-established restaurant tradition and culture of going out
and eating out. The positive growth in the Spanish economy in the past few years led to a
continuous increase in the consumption of Spaniards outside the home. With their increased
purchasing power, consumers are gradually shifting away from low-cost options and are looking
for gastronomic options that combine an attractive environment and good-quality food.
2018 was a positive year for full-service restaurants, both in terms of increasing value sales
and opening of new outlets. The increase in value sales was also supported by the positive
trend that Spain is enjoying as a prime tourist destination. In the forecast period, this trend is

Alsea Acquires Vips Group To Become the Biggest Player


In October 2018, Food Service Project, owned by Alsea, acquired Sigla SA, the owner of Vips
Group. This deal, which is pending the approval of the Spanish Markets Commission, made the
new group the leading player and main operator of restaurants in Spain. It will be managing 10
brands in total – Foster’s Hollywood, VIPS, Domino’s Pizza, Starbucks, Ginos, Burger King, TGI
Fridays, LAVACA, Cañas y Tapas and Wagamama.
The acquisition will allow Alsea to diversify its portfolio in Spain, integrating concepts with
those that it did not already have in the Spanish market. This new agreement will also see Zena
enter specialist coffee and tea shop chains by integrating the outlets of Starbucks managed by
Vips in Spain.

Chained Asian Full-service Restaurants Continue Their Fast


Development
Spaniards, especially young ones, are open to trying new flavours and experiencing different
types of cuisine. This is one of the reasons for the growing popularity of international cuisine
restaurants in Spain, although currently mostly concentrated in the metropolitan areas of Madrid
and Barcelona. The fastest-growing international cuisine is Asian. Most chained Asian full-
service restaurants are currently concentrated in Madrid and Barcelona, although they are
undergoing a process of expansion in order to reach other cities in the country.

Pizzeria Carlos Continues Its Expansion


The pizza full-service restaurants operator Pizzeria Carlos is continuing its expansion as it
looks to achieve its development plan to reach 100 outlets by 2020. In addition to that, the
restaurant chain is in the process of remodelling its existing restaurants in order to revamp its
image. In addition to its full-service restaurants, Pizzeria Carlos is successfully implementing
takeaway and delivery services as well.

PROSPECTS

Pizza Limited-service Restaurants Gain Strength


After being one of the channels that suffered the most in the crisis period, limited-service
pizza restaurants have once again shown themselves as a dynamic and strongly developing
channel. The fundamental factors for this have been the recovery in consumption and the boom
experienced by delivery, enhanced by online platforms, in which pizzas have always been a
pioneering product. The new push by brands already well known and focused on home delivery
has also been joined by the consolidation of the new formulas of Italian-inspired fast restaurants
and cut-pizza establishments.
Although delivery and takeaway formulas are still the most representative format in limited-
service pizza restaurants, several alternative concepts have begun to become an important
driver in this channel. Among them, Pizzerias Carlos divides its offer between the home delivery
service and a complete table service at its premises, and the offer of pizzas is reinforced with
pastas, salads, complementary dishes and desserts.

Burger Limited-service Restaurants Remains the Biggest Channel


The restaurant concepts based on burgers have benefited in recent years from the new wave
of popularity that this product has experienced. After having been a symbol of “junk food” for
years, burgers have recovered a certain prestige, thanks to a makeover of their classic formula
and the introduction of new ingredients, which has put them at the centre of the “gourmet” food
and a “foodies” trend. The repositioning process of burgers has been mainly due to full-service
restaurant chains, although limited-service establishments have made considerable efforts to
rebrand themselves as well. This, together with the already evident recovery in consumption,
has led to a strong development in this channel.
The channel continues to focus on standalone restaurants, to the detriment of outlets in
shopping centres. This is also due to the fact that the big brands have a preference for the
development of the freestanding format.

Bakery Products Limited-service Restaurants Continues To Perform


Well
Bakery products continues to be one of the formats that is doing well in limited-service
restaurants, thanks in part to its wide variety of products, ranging from all types of sandwiches to
pastries. Bakery products limited-service restaurants are expected to continue to grow as they
benefit the most from both regular and impulse demand for breakfast and afternoon snacks. In
addition, bakery products outlets are being refurbished to feature new designs based either on
sustainability and environmentally-friendly options or to resemble French-style bakeries in order
to attract consumers.

COMPETITIVE LANDSCAPE

High Concentration of Competitors in Burger Limited-service


Restaurants
One of the main characteristics of burger limited-service restaurants is the high levels of
concentration. Historically, almost all establishments have been divided between the Burger
King and McDonald's chains, which currently account for around 80% of the chained outlet
numbers. The only competitor of any real note is TGB The Good Burger. Just five years since its
launch, at the end of 2013, the chain, integrated into the Restalia group, already accounts for
almost a 10th of the outlets in chained burger limited-service restaurants, something that no
other operator outside the big two had been able to achieve to date. Burger King, despite
already being the brand with the most outlets in the Spanish market, continues its rapid
expansion, with a medium term goal of reaching 1,000 outlets in 2022.

Rodilla Continues To Grow


Rodilla, one of the leading players in bakery products limited-service restaurants, continued to
grow in 2018. Following the transformation of its concept at the height of the economic crisis in
2012 and targeting customers aged between 25-34 years old, Rodilla continues with its goal of
expanding its network of stores. It intends to open stores in new Autonomous Communities in
which it is not already present, such as the Balearic Islands for example. The good results in
recent years are also due to expansion of its delivery services, mainly through the online
channel. Changes in consumer habits are also determining the success of the brand. The
younger population is increasingly concerned about its health and what it is eating. In this
regard, Rodilla is trying to adapt to consumer expectations of healthier and artisanal products.

registers a decline of 3% in terms of outlets to stand at 235 units and EUR199 million in 2018

PROSPECTS

Self-service Cafeterias Supported by International and Domestic


Tourism
The self-service cafeterias model in Spain is closely linked to high-transit locations, such as
airports, railways and bus stations. In this regard, tourism plays an important role in its growth.
In 2018, Spain again welcomed a record number of inbound tourists. In addition to that,
domestic tourism continued to grow. This drove the sales in self-service cafeterias in 2018. As
tourism is expected to maintain its positive performance over the forecast period, this is likely to
lead to a further increase in sales of self-service cafeterias.

Chained Self-service Cafeterias Is Expected To Increase Its Share


Self-service cafeterias is one of the few categories in which chained operators dominate in
terms of value sales and outlets. Chained brands will continue to gain share from independent
operators as their locations are situated in strategic locations in airports and railway stations
where it is hard for independent operators to enter. This therefore provides growth opportunities
for chained operators as they have access to bigger consumer groups.

Wider Product Offer


Players are changing their menus in order to respond to changing consumer habits.
Spaniards, especially the younger population, are increasingly concerned about their health and
what they are eating. In this regard, self-service cafeterias are trying to adapt to consumer
expectations for healthier and artisanal products.

COMPETITIVE LANDSCAPE

El Corte Inglés Cafetería Continues To Lead


In 2018, El Corte Inglés remained the leader in self-service cafeterias both in terms of outlets
and value sales. The increasing sales at El Corte Inglés department stores has benefitted the
company in terms of its in-store foodservice establishments. The majority of these

establishments are self-service cafeterias, alongside El Corte Inglés restaurants and third party
brands like Starbucks, Burger King and Rodilla. To maintain the momentum in this business
area, El Corte Inglés has developed a plan to continue opening new gastronomic spaces, as the
company believes that the gastronomic areas attract around 10% of the customers at its
department stores after they have made purchases on the shopfloor. This figure has almost
doubled in the last three years and is expected to increase even more. Among the
improvements, the company includes its commitment to quality coffee and has highlighted the
alliance signed with Illy as an exclusive supplier in all its establishments.

Areas SA Adds Paul To Its Offer in the Travel Environment


Areas SA (GRUPO) is another strong player in self-service cafeterias. The company recently
opened a new Paul outlet in Madrid, bringing the company’s network of Paul outlets to three.
Paul, which was founded in 1889 and is present in 43 countries, includes a range of quality
coffee and bakery products made using natural raw materials and with ranges adapted for each
time slot. The recent remodelling of this establishment has opted for a “traditional and
glamorous style”, described as being “in the purest Parisian style, with a timeless atmosphere
and unique rustic finishes and details”. Areas currently manages 58 establishments at Madrid
Airport, where it is the main foodservice operator.

Eat Out Group Expands Its On-the-go Concepts at the Spanish Airports
The travel division of Eat Out is expanding its on-the-go concepts at the Spanish airports. In
2018, it launched its first space in Spain for the Portuguese brand Go Natural, specialising in
healthy food. The brand is orientated towards the grab-and-go model and has a wide range of
healthy products, from hot and cold pastries and sandwiches with different types of breads, to
wraps, sushi, salads, pasta, coffees and infusions.
In addition, in 2018 Eat Out Group signed an 8-year contract to operate 19 self-service food
areas in Barcelona El Prat airport until 2026. The company is immersed in an ambitious
remodelling project of its premises in the airport, which will be carried out in several phases, and
completion of which was scheduled for spring 2019.

Weak Performance Projected for Chained Street Stalls/kiosks


Chained street stalls/kiosks are experiencing difficulties in terms of value sales and number of
outlets and little improvement is anticipated over the forecast period. This foodservice format is
less popular in Spain than in other European countries or the US for example. Although the
Spanish economy is improving and thus Spaniards’ consumption outside of the home is
increasing, these factors will benefit other channels more, as consumers seek a higher-quality
offer.

Independent Street Stalls/kiosks Are Expected To Grow Due To the


Popularisation of Food Trucks
While chained street stalls/kiosks are set to decline, growth is anticipated for the independent
operators, mostly due to tourism growth and the increasing popularity of food trucks. In terms of
tourism growth, tourists are attracted by the offer of typical Spanish products such as ice cream,
churros and hot chocolate. This offer is seasonal, and is concentrated along the Mediterranean
coast.

Food Trucks Are Gaining Strength


Spaniards are used to eating outside the home, however they prefer eating in a bar/cafeteria
or full- or limited-service restaurants, as they still prefer longer lunch breaks to a quick snack in
the park. This was one of the reasons why food trucks, which entered the Spanish market in
2014, were not perceived as a trendy option.
Nonetheless, with the increasing popularity of culinary shows like MasterChef and the support
of the food truck culture from several Michelin star chefs, this concept is expanding, as some of
the food trucks started offering higher-quality food. These aspects are expected to see food
trucks gain strength and increase sales over the forecast period.

Oscar Mayer Is the Only Chain in 2018


The presence of chained players is weak in street stalls/kiosks in Spain. Big Dog and Oscar
Mayer were the only significant players in the Spanish market, but, with the disappearance of
Big Dog in 2014, Oscar Mayer remained the only chain. Campofrio Food Group operated Oscar
Mayer until 2014, when it was acquired by Sigma Alimentos. No new brands are expected to
enter the Spanish market in the near future. The biggest developments are in independent
operators, where food trucks are gaining strength.

Food Trucks Are Growing


The development of food trucks has broadened the choice for on-the-go foodservice
consumers. While the presence of food trucks is still limited to special events, such as markets
and, in some cases, only over the Christmas period, more food trucks are being contracted to
offer catering at special events.
In addition to that, food trucks are increasing their online presence, mainly through the site
foodtruckya.com, where consumers can check for food trucks that sell the type of cuisine they
are interested in.

PROSPECTS

Consumer Foodservice Through Standalone Continues To Lead


Standalone locations have been traditionally dominant in consumer foodservice in Spain. This
is mainly because Spaniards enjoy socialising in bars and restaurants with family and friends.
The improvement in the Spanish economy over the past four years and the rising consumption,
especially outside the home, will further support this tradition of going out and eating out. In this
regard, standalone locations will continue to dominate consumer foodservice sales by location in
the country, both in terms of value sales and number of outlets.

Improving Economy Supports Retail and Entertainment Consumer


Foodservice Sales
The improvement in the economy is already having a positive effect on retail in Spain.
Although e-commerce is a growing trend in the country, the outgoing culture of Spaniards will
continue to support retail in the physical environment as well. Some brands, such as El Corte
Inglés and Ikea, are already seeing the positive effects of the combination of foodservice and
retail. According to El Corte Inglés, the number of visitors to its foodservice establishments
located in the brand’s department stores doubled in the past three years and is currently at 10%
of the customers visiting its retail environment. This is why some of the big chain brands are
opening outlets in the department stores of El Corte Inglés, such as Starbucks for example.
An opportunity for growth is also seen in the increase in the offer of consumer foodservice in
shopping centres, which is picking up pace in Spain. Some shopping malls are already using the
foodservice offer in their premises to attract new customers.
In addition to that, the increased purchasing power of Spaniards provides opportunities for
growth in spending in entertainment, thus increasing the offer of consumer foodservice in these
locations as well.

Tourism Provides Growth Opportunities in Travel and Lodging


Environment
The strong growth in tourism that Spain has been enjoying in recent years provides
opportunities for foodservice operators to increase their presence in travel locations. Areas SA

is the leading foodservice company in travel locations. The group has outlets in the biggest and
most important airports in Spain. Areas currently manages 58 establishments at Madrid Airport,
the biggest in the country, where it is the main foodservice operator. In 2018, Eat Out Group
signed an 8-year contract to operate 19 self-service food areas in Barcelona El Prat airport until
2026. The company is immersed in an ambitious remodelling project of its premises in this
airport, which will be carried out in several phases, and the completion of which is scheduled for
spring 2019.
