Acknowledgement
Some special thanks to all the persons who have helped me get to this stage in my education ,
and to those who have helped me with the construction of this portfolio.

Introduction
Myself , Jonathan Rajak has now completed the topic on : Wine Making
Winemaking or vinification is the production of wine, starting with the selection of the fruit, its
fermentation into alcohol, and the bottling of the finished liquid. Winemaking can be divided
into two general categories: still wine production (without carbonation) and sparkling wine
production (with carbonation – natural or injected). Red wine, white wine, and rosé are the other
main categories. Although most wine is made from grapes, it may also be made from other
plants..
This topic has been very interesting and very useful as i now know how to cultivate my own
wine. I found this topuc very interesting and can see myself using these techniques in the future,
I truly enjoyed this topic.

Define the term : Wine
Wine is an achoholic drink made out of the fermented juice or various fruits. Sugar is conumed
by yeast and converted to ethanol and carbon dioxide, releasing heat in the process.

Define the term : Filtering


Filtering is the process wherey fermented fruit juice is passed through a screen to sieve all
unwanted leftover chunks and particles.

Define the term : Refining


Refining is the process of improving the quality of your wine by removing substance impurities
or unwanted components through techniques such as distillation , filtering and chemically
reducing test.

Define the term : Bottling


Bottling is the last step in the process of wine making. Bottling is simply putting wine into
bottles getting them ready for sale or letting them further age then selling them.

Define the term : Distilling


Distillation is a process that increases the "alcohol purity”. Distillation is a process of heating
wine to a boiling point and then condensing the vapor to create a concentrated form of the
original liquid. The process was originally developed as a way to make wine safe to drink by
removing impurities that could make it spoil.

Identify Three (3) types of wine
THREE TYPES OF WINE : Red Wine
Rose Wine
White Wine

Select One (1) type and give a fruit suitable for setting that type
of wine.
Red Wine – One fruit suitable for setting red wine is Plum.

Set a local wine and give the recipe used.


APPLE WINE WAS SET
Recipe:
4kg Apples
2 lbs. of sugar
2 tbsp. Yeast
2 tsp. lemon juice
1 stick cinnamon
Pulverize apples.
Drain the apple juice into a plastic or glass jar with enough space for fermentation. Then, stir the
apple juice, the sugar, the yeast nutrient, and the lemon juice to acidify.
Wait 24 hours. This step helps to prepare the liquid for fermentation and kills bacteria or other
nocive microorganisms.
Sprinkle the wine yeast over the surface of the juice and stir gently. Close the fermenter and
install an airlock on the top to evacuate the carbon dioxide. Allow this must to ferment for 5-8
days.
Once the wine has cleared completely, siphon off the sediment again then bottle.

Reflection
Much was done on this topic and I am deeply satisfied with the outcome of the teachings carried
out.
There are no comments needed for me to add on how to improve the teaching system. I am
satisfied with the content and progress covered and captured with this topic. Leaving and moving
on to another topic can be hard but it it with great confidence that I can say Miss Philana
Roberts-Peters has done a good job. Thank You.
