INGREDIENTS METHOD

200g rice noodles, dr y, small size (soak for 8 m ins)

200g rib eye steak

1 handf ul morning glor y

1 handf ul beansprouts

The Meatballs
200g pork mince

2 tbsp panko breadcrumbs

Salt & pepper to season

1-2 tbsp water

The Soup
1kg pork bones

3-4 L water / chicken stock

1 large onion

6-10 cloves garlic

2 star anise

1 cinnamon stick

1 tbsp coriander seeds

1 tsp white peppercorns

3 pandan leaves (optional)

1 lemongrass stick

1 thumb sized piece galangal, finely sliced

Handf ul coriander roots

The Seasoning / Marinade (melt together & use for marinade & stock)
1 tbsp fermented soybean paste

2 ½ tbsp light soy sauce

2 tbsp dark soy sauce

1 tbsp sweet soy sauce

1 tbsp rock sugar

1 ½ tsp sea salt

½ ladle chicken stock

Nam Jim Jaew


1 tbsp toasted rice powder (made from grain s of dr y Jasm ine rice , toaste d in a d r y pan)

2 tsp dried red chilli f lakes

½ red onion, finely sliced

1 spring onion, finely sliced into rings

Small handf ul of coriander leaves, picked

The Sauce
2 tbsp fish sauce

1 tbsp palm sugar

Juice of half a lime

Make the Nam Jim Jaew


Toast the dr y red chillies on a low heat for 1- 2 m inute s, and then b li tz in a sp ice grinde r into a fine p owde r. Toa s t your dr y
rice in the same way and then pound it in a p e stle and m ortar.

Prepare the red onion, spring onion and coriand e r and ad d to a bow l with a coup le of ts p . of t he ground chil l i. The n a dd ‘The
Sauce’ ingredients to the spices and mix tog e ther unti l all the p alm su gar has m e lte d. To finish it of f, scat te r the toa s te d rice
powder over the top.

Broth
Blanch your pork bones to get all the fatty impuriti e s ou t. Drai n the wate r and ad d the chicke n stock to t he p ot w ith t he
bones, along with the rest of the soup ingred ie nts (r oughly chop p e d). Le t i t bub b le away for at l e a s t 2- 3 hours.

Cut the morning glor y into rough chunks. Pl ace the soybe ans into a pe stle and m ortar a nd b a s h into a p a s te . N ow b a s h in
the rest of the seasoning ingredients. Slice the ste ak into thi n slice s and ad d a sp oon of t he s e a s oning m ix to m a rina de . Add
the rest of the seasoning mix to the soup.

Make the meatballs


Add the meatball ingredients to a blender and b li tz for 2 m inute s. R oll into b ite si ze m e at b a l l s . Af te r 3- 4 hours drain t he
soup, saving the meat from the bones, and add the m e atb alls to the sou p . They w ill f loa t to t he top w he n re ady.

Assemble
Place the soaked noodles into the soup for a m inute to war m thr ough. Blanch the b e ansp rout s a nd m orning glor y a nd s e t
aside. Finally, cook the sliced steak in the soup unti l me dium rar e .

Place the shredded meat, meatballs, bean sprouts, m orning glor y and ste ak on top of the noodle s , a nd top w ith t he s oup .
Garnish with coriander, and nam jim jaew.
