Acceptability of Santan (Ixora coccinea) Flower extract as Beverage

Introduction
The concept of using fresh edible flowers in cooking is not new. Today, many restaurants
use different flowers in their ingredients for an exotic taste and for a touch of elegance. Some
flowers are used for dessert.(Lyla 2019) There are many foods or product that can be used as
beverage or flavoring example: Lavender,jasmine,Rose,etc.but can santan flower extract be used
as a beverage or flavoring? Santan flower is a type of flower that contains a liquid that can be
used as a flavoring it is commonly found growing in natural places, apart from having medicinal
qualities, santan flowers are edible. Foragers regularly talk of plucking the flowers in the wild
and sucking on the sweet nectar. The petals also make great snacks when tossed into batter and
mixed thoroughly.  you can choose to grow santans for their beautiful flowers, for medicinal
reasons or culinary purposes. Whatever the reason that drives you to grow these beautiful
flowers, your efforts will be richly rewarded when they come into bloom.  

Question or Problem:
General Statement of the Problem:
The goal of this study is to formulate a beverage using Santan flower extract. 

Sub-questions:
A. What is the acceptability level of santan flower beverage in terms of: 
a. Taste 
b. Sweetness 
c. Aroma 
d. After Taste 

B. What is the santan flower extraction formulation is the most acceptable. 


A. Stevia plant -50% 
B. Calamansi – 25% 
C. Santan flower – 25% 

Hypothesis/Engineering Goals:
Null: Santan flower extract is not alternative ingredient for beverage
Alternative: Santan flower extract is alternative ingredient for beverage
Review Related Literature
The santan flower, also known as the Ixora coccinea, is a popular ornamental plant in tropical
countries such as the Philippines, Malaysia, and Indonesia. Its flowers come in various colors,
including red, orange, yellow, and pink. While it is commonly used as a decoration, the santan
flower has also been traditionally used for medicinal and culinary purposes.
In some parts of Southeast Asia, santan flower tea is a popular beverage. The flowers are boiled
in water to make a fragrant tea that is believed to have various health benefits. According to
traditional medicine, the tea is said to have anti-inflammatory, anti-microbial, and anti-cancer
properties.
A study published in the Journal of Agricultural and Food Chemistry found that the Ixora
coccinea flowers contain high levels of flavonoids, which have been associated with a range of
health benefits, including reducing the risk of cardiovascular disease, cancer, and
neurodegenerative disorders. The study also found that the flowers have antioxidant properties

In addition, the santan flower has been used in traditional medicine to alleviate various health

use of the flower suggests that it may have potential health benefits. However, more research is

when consuming it.

-A cup like a glass bottle, mug, or cup
-spoon

-Santan flower (Ixora coccinea)
Santan flower can be bought at a market.
-Stevia plant/powder
Stevia can be bought online or in a market.
-Calamansi
Calamansi can be found growing from markets.
-Sugar 5g
IT can be bought from neighboring markets.
-Distilled Water 10ml
It can be bought at a market.

Procedures for Preparation of Product


Collection and Preparation of Materials Ixora Coccinea Linn flowers (santan) were collected
from neighboring residences. The petals were washed thoroughly and dried by the researcher.
Three cups of distilled water are heated in a pan or any utility that you can use to boil water. As
soon as the water began to boil, the flowers of santan was added, and the researcher boiled the
santan flower for ten minutes in low temperature. Afterwards, the researcher allowed the petals
too steep for ten minutes for another ten minutes. The mixture was poured from the pan to a
pitcher and add a little bit of ingredient like stevia and calamansi so that it has a little bit of taste
and sweetness and pour in a glass of cup, and it is ready.
