Mint Cookies N’ Cream Brownies

¼ c. butter, softened ½ c. sugar


2 eggs ¾ c. chocolate syrup
½ c. flour 3 mint Oreo cookies,
chopped

Mint Cream:
¼ c. butter, softened 1 c. powder sugar
½ T milk ¼ t. mint extract
1 drop green food coloring

1. In a large bowl, use electric mixer to cream butter and sugar


until light and fluffy. Add eggs, one at a time, beating after each
addition. Beat in chocolate syrup, then flour, just until blended.
Fold in chopped cookies.
2. Pour into greased square or circle pan. Bake at 350 for 25-30
minutes to until a toothpick inserted near the center comes out
clean. Cool on counter top.
3. For mint cream; in a small bowl, cream butter and powder sugar
until light and fluffy. Beat in the milk, extract and food coloring.
Frost brownies; sprinkle with crushed cookies. Cut into squares.
