SCRIPT

Jose A:Bees are central to the production of honey,about 30,000 to 40,000 bees produce
honey,the accuracy and subtlety of this process is staggering,a wide range of tools is
used to get this process underway,such as a pollen trap,shears, a chamber, a spur
embedder and so forth.

Ruiz:As you all may know,it all starts with an egg,which then transforms into larvae,the
larvae,in turn,hatches the eggs,like the birth of a butterfly.

Jose A:The use of equipment is at the core of the safety by which this process is carried
out, coverolls,gloves,bee veil and boots

Valeria:A veil is a must-have for all beekeepers since it protects your face from potential
face stings and questionable decisions.Most beekeepers wear a suit to protect
themselves from bee stings while they work.Bees can sting through gloves, even ones
made from leather.

Byron:I’m going to talk about some tools,you make use of the spatula to remove
unwanted material,a pollen trap is then used to prevent bees from getting out of the
hive,the filter is small so the pollen pellets is removed from the bees.

Jose A:Smokers do not pose a threat to bees,it’s just a smoke that puts them off
interferes with their sense of smell so that they don't react to alarm pheromones. Bee
smokers are usually referred to as “smokers” for short.

Jose A:Honey starts as flower nectar collected by bees, which gets broken down into
simple sugars stored inside the honeycomb. The design of the honeycomb and constant
fanning of the bees' wings causes evaporation, creating sweet liquid honey. Honey's
color and flavor vary based on the nectar collected by the bees.

Ruiz:For example, honey made from orange blossom nectar might be light in color,
whereas honey from avocado or wildflowers might have a dark amber color.

E.Ruiz:On average, a hive will produce about 55 pounds of surplus honey each year.
Beekeepers harvest it by collecting the honeycomb frames and scraping off the wax cap

that spins the frames, forcing honey out of the comb.

Byron:After the honey is extracted, it’s strained to remove any remaining wax and other
particles. Some beekeepers and bottlers might heat the honey to make this process
easier, but that doesn't alter the liquid's natural composition.

Valeria :After straining, it's time to bottle, label, and bring it to you. It doesn't matter if the
container is glass or plastic, or if the honey is purchased at the grocery store or farmers’
market. If the ingredient label says “pure honey,” nothing was added from bee to hive to
bottle.

Valeria:The process of making honey concludes when, over time, the nectar created
binds with enzymes and wax; thus obtaining the honey its characteristic sweet flavor.
Ruiz:To remove any remaining wax that may exist, after collecting the product,
beekeepers leave it in decanting for a few days. After resting for a few days, the product
is filtered and packaged.

Alejandra:On the other hand, in the case of raw honey, after resting for a few days, the
honey is packaged directly. That is, the product is not filtered.

Jose A:What can we make of all this? Well,to say this is counterintuitive would be an
understatement.It stands to reason that this process is nothing short of breathtaking,a
plethora of steps have to be factored in,the paramountcy of the equipment, the attention
to detail, as well as pinpointing the number of possible outcomes of the whole
thing.Moreover,When all is said and done,one can’t help but to be in awe of the work
performed by beekeepers.Whilst it’s a fulfilling hobby for some,it is still a job fraught with
challenges.
