1.31g sodium bicarbonate (bicarb) plus 1.00g anhydrous citric acid or 1.09g citric acid
monohydrate. They are stoichiometrically correct in terms of making trisodium citrate (TSC),
however I'm not sure if sodium bicarbonate can completely react because a solution of
bicarb has a lower pH than that of TSC. It's possible that you may end up with disodium
citrate, in which case the amount of bicarb for a complete reaction would be two thirds of
the above figure.

Unless you want to collect as much CO2 as possible, the amount of water isn't important…
go with 100mL for the amounts I've specified.

Baking soda is sodium bicarbonate- NaHCO3. It reacts with citric acid to form sodium
citrate and bicarbonate ion, which rapidly equilibrates to carbonic acid and then to carbon
dioxide, forming the famous baking soda and acid bubbles.
