Chicken Parmesan

Ingredients: For the chicken:

4 boneless, skinless chicken breasts


Salt and pepper, to taste
1 cup all-purpose flour
2 large eggs
2 cups breadcrumbs (you can use Italian-style breadcrumbs for extra flavor)
1/2 cup grated Parmesan cheese
Olive oil, for frying

For the assembly:

2 cups marinara sauce


1 1/2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil leaves, for garnish (optional)
Cooked spaghetti or pasta of your choice (for serving)

Instructions:

1. Preheat the oven to 375°F (190°C).

2. Begin by preparing the chicken breasts. If they are thick, you can butterfly them by cutting horizontally through
the center, but not all the way through, to create two thinner pieces from each breast. This will help the chicken
cook evenly.

3. Season the chicken breasts with salt and pepper on both sides.

4. Set up a breading station: In one shallow dish, place the flour; in another dish, beat the eggs; and in a third dish,
combine the breadcrumbs and grated Parmesan cheese.

5. Coat each chicken breast first in the flour, then dip it into the beaten eggs, and finally coat it with the breadcrumb
mixture, pressing gently to adhere the breadcrumbs.

6. In a large skillet, heat enough olive oil to cover the bottom of the pan over medium-high heat. Once the oil is hot,
add the breaded chicken breasts and cook until golden brown and cooked through, about 3-4 minutes per side.
Place the cooked chicken on a plate lined with paper towels to drain any excess oil.

7. In a baking dish, spread a thin layer of marinara sauce to coat the bottom. Place the cooked chicken breasts on top
of the sauce.

8. Spoon a generous amount of marinara sauce over each chicken breast, then sprinkle shredded mozzarella cheese
and grated Parmesan cheese on top.

9. Transfer the baking dish to the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and
bubbly.

10. If desired, broil for an additional 1-2 minutes to brown the cheese slightly, but be careful not to burn it.

11. Remove the dish from the oven and let it cool for a few minutes before serving.

12. Garnish with fresh basil leaves, if using, and serve the Chicken Parmesan over cooked spaghetti or your favorite
pasta.
