Ingredients
For the cake:
4 eggs
1 cup olive oil (not extra virgin)
1 cup white sugar
2 cups Greek Yoghurt
Zest of 1 orange
1 boiled and crushed orange
3 tsp baking powder
400 grams filo dough, baked till crisp and crushed by hand
Dash of vanilla
Instructions:
1. Bake the filo pastry sheets till they are crispy, let them cool and crush them by hand
roughly
2. Mix the eggs, sugar, oil, yoghurt, boiled and crushed orange, orange zest, and the rest
of the custard ingredients till combined
3. Add filo powder to the wet custard mix
4. Bake for 45-50 minutes till a knife inserted comes out clean
5. Make the orangy sugary syrup and let it cool
6. Pour it on the hot cake and let it chill
7. Serve with a dollop of ice cream/cream or Greek yoghurt
