Overview

Many people are forced to think out of the box to survive the COVID pandemic. Many of
them have opted to start small business but some are still struggling.
As a good and caring citizen of Malaysia, you have decided to create a food product using
the fermentation concept you recently learned to help raise funds for people who are
affected badly during this pandemic in Kuala Klawang.
So, using the knowledge learnt in Chapter Cellular Respiration, subtopic 7.3 Fermentation,
create a project report to help you start up a small business to raise funds/income.

Objectives:

To produce a proposal report to market food products produced through fermentation

Task Instructions

1. All students are required to do PBL task of food fermentation


(tapai/yogurt/bread/donut) and complete reports in the form of folios and Video /
PowerPoint/Canva presentations.
2. The project is carried out individually.
3. Each student is free to choose the product to be produced but must use at least 2 to
3 basic ingredients.
4. Assignment period of 14 days. You will need to submit INDIVIDUAL folio and Video /
PowerPoint presentation to document the your product.
5. INDIVIDUAL videos/PowerPoint Presentation/Canva and folios must be submitted no
later than 31 December 2022.
6. Assignment is submitted through Microsoft Form

Discussion (20 marks):

1. State the process that takes place in bread making

4. Amy bought yogurt from a store. She forgot to keep it in the refrigerator. The next
morning, she found that the yogurt had gone bad. Explain why yogurt can spoil if it is
not kept in the refrigerator?

5. Natasha tried to make bread using dry yeast bought from a shop. When she mixed
the yeast with plain flour and cold water, she found that her bread did not rise after
half an hour. Explain how you can help Natasha solved her problem
(4 marks)

6. Alex was making wine using yeast. Alex found that if grape juice is kept with yeast in
covered container, the yeast will slowly break down the glucose in the grapes.
However, if the container does not contain any oxygen, the glucose is broken down
more rapidly by the yeast, and the alcohol content increases very quickly. At the end
of the experiment, Alex found that even though there are grapes that have not been
oxidized, the breakdown rate becomes slower again.

i. What type of respiration does yeast conduct?
