 Students will develop menus and design them on a web-based system in a variety of layouts and themes.
 Students will research foods from a country other than the U.S.
 Students will design a food truck model
 Students will discover roles, duties, and functions of those in the food production and services career.

Instructional strategies encompass any type of learning technique a teacher uses to help students learn or gain a better understanding of the course material.
They allow teachers to make the learning experience more fun and practical and can also encourage students to take more of an active role in their education.

DIFFERENTIATION/ACCOMODATIONS/MODIFICATIONS
What strategies/methods would you use to differentiate for different learning styles? How can accommodations and modifications be made for special needs
students (IEP)?
 Reteach – By using exit tickets and grade as you go, it is very easy to use those formative assessments to track student
understanding and reteach as required.
 Small group – Students will be placed in groups. This is a great way to do small group instruction and reteach if
necessary.
 Task Cards – Along with the agenda, you could create individualized task cards for students who need a little more
assistance staying on track during longer projects. You can incorporate this in small group with their other group
members by having the entire group add specific items to their agendas as needed.
 Group Conferences with Reflection and Goal Setting – Try to meet with each group once or twice a week. Use your
rubric and help them assess what is already completed and what needs to be improved. Help them set goals and reflect
not just on the project but also their teamwork, communication, and individual work quality.

ACTIVITY #1
Activity Title: Entrepreneurship Jigsaw Puzzle Research and Gallery Walk

Timeframe: 40-60 minutes

Materials Needed:
 Laptop (or access to internet)
 Paper
 Pencil/pen

Directions:
Jigsaw Research Activity
1. Divide students up into groups of three. Assign each group a specific job in the food service industry (manager, chef,
busser, waitress, hostess, etc.).
2. Explain that, as a group, they will be learning about the roles, duties, and functions of people in food production and
service careers by using the internet. Each student will take one of the three criteria (roles, duties, and functions) and
research those who cook, manage, and are in a customer service role.
3. Each group should receive a piece of chart paper or posterboard and label it with the job they chose. Then, draw a
circle on a piece of chart paper or poster board and divide it into three equal parts. As the students conduct their
research, they should write their information on their piece of the circle.
Gallery Walk Activity
1. When they are finished, put the graphic organizers around the room.
2. The students are now to walk around the room and read all the graphic organizers. Give each student at least three
sticky notes. On these sticky notes, they should write questions they have about the research, knowledge or experience
from industry (ex. Family members, working in family’s business, etc.), comments about the research.
3. Ask groups to go back to their original poster to read the sticky notes and do any additional research if necessary.

ACTIVITY #2
Activity Title: Country Research and Menu

Timeframe: at least 120 minutes (or as much time as your students need)

Materials Needed:
 Computer (or access to the internet)
 Paper
 Pencil/pen
 Graphic organizer

Directions:
1. Each group will choose a country (other than the United States) and research foods and beverages that are popular in
that country for breakfast, lunch, dinner, sides, desserts, and snacks. They need to choose three from each category
and find a picture for each dish. There is a link to a Google Slide students can use for their research.

2. After researching, they need to decide the type of food truck (dessert and drinks only, breakfast, lunch/dinner, etc.).
3. Next is creating a menu. Use websites like www.canva.com.

ACTIVITY #3
Activity Title: Developing a Brand

Timeframe: 3-4 Days

Materials Needed:
 Computer (or access to the internet)

Directions:
1. Groups will create a detailed business description of their food truck that includes: name, logo, mission statement,
services, hours, demographics, sample social media posts, coupons, and sample advertisements. This is a link to a
Google slide where students can put their business descriptions.

2. There are several free websites to make your logo (www.freelogodesign.org) and graphics (www.canva.com).

ACTIVITY #4
Activity Title: Food Truck Design

Timeframe: 3-4 Days

Materials Needed:
 Poster, computer paper, cardboard, markers, color pencils, glue, tape, etc. Basically anything to make the food truck.

Directions:
1. Groups need to use all the resources they have made so far to build a food truck design.
2. Instruct the groups to use their logo, name, etc. on their food trucks. They can be 2-D on copy paper or a poster, or
students can build one from poster board and cardboard.
