INDUSTRY

BACKGROUND

SIZE AND GROWTH OF THE MARKET

Nowadays, coffee shops are very trendy especially to the millennials. Some customers

consider working at coffee shops for them to have a new environment. Since coffee shops are

mostly quiet and chill places to study and work at the same time. In fact, the Coffee Industry in

the Philippines has a long history. A Spanish Franciscan monk planted the first coffee tree in Lipa,

Batangas, in 1740. From there, coffee cultivation spread throughout Batangas, allowing the

province to prosper throughout time. Lipa subsequently became the Philippines' coffee capital.

41
New Era University
COLLEGE OF BUSINESS ADMINISTRATION

Due to huge chains that sell iced and blended drinks, younger people are getting more

interested in coffee. Some companies even provide 'coffee bases,' or frappuccinos without

espresso, to cater to clients who want the look of coffee but not the taste. This indicates that coffee

culture is immensely popular among people of all ages and can cater all the customers

In the Philippines, there are many businesses who offer spa services. And the reason is to

relieve their stress and body aches and most of them are customers who work the night shift or

even an ordinary customer. Since working is very tiring and our bodies find it hard to relax, Most

Filipinos pamper themselves during their free time or rest day where they can maximize their time

and day to have the best relaxing experience.

FORMS OF ORGANIZATION

Our business is a sole proprietorship. A Sole Proprietorship is a business structure owned

by an individual who generally has full control and authority over the business. The business owner

is referred to as the “sole proprietor” and exclusively owns all assets and profits of the business.

He or she is also personally liable for all the debts and losses that the business might incur.

Because a sole proprietorship is indistinguishable from its owner, sole proprietorship taxation is

quite simple. The income earned by a sole proprietorship is income earned by its owner. Most

small businesses in the Philippines start as sole proprietorships and progress to other business

structures as they mature and increase profit. Since the Philippines does not adopt the legal concept

of Limited Liability Company (LLC) or Private Limited Company (PLC) like many countries such

as the United States of America, United Kingdom, and Singapore, the closest entity that Philippine

sole proprietorships commonly transition to is a domestic corporation.

Advantages of a Sole Proprietorship

- Requires minimum amount of capital

- Minimal regulations and compliance requirements from government agencies

- Easy to register

- Sole proprietor has complete control of the business

- Easy to manage, with no necessary formalities or regulations about having a board of

directors, committee, or meeting minutes.

47
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

- Sole proprietor acquires all assets and profits of the business and can freely mix business

and personal assets

Disadvantages of a Sole Proprietorship

- Sole proprietor is subject to unlimited personal liability for the debts, losses, and

liabilities of the business

- Sole proprietor cannot raise capital by selling an interest in the business or obtain

capital funding through established channels

- No clear-cut definition between personal and business income because the sole

proprietor is personally liable for the income tax of the business

- Sole proprietorships rarely survive the death or incapacity of their owners and

hence do not retain value

- Business bankruptcy affects the owner personally

- Personal lawsuits against the sole proprietor can potentially consume all their

personal assets and negatively affect the financial aspects of the business

- Lawsuits filed against the business are also deemed as lawsuits filed against the

owner; creditors of the owner or of the business itself can reach both the business

and the owner’s personal assets, and if such lawsuits are successful, the owner is

obligated to pay the damages with his or her own money

PROPOSED EXIT STRATEGY

Today’s generation of business advisors recommend at least coming up with a thorough

exit strategy into the business plan from the very start. An exit strategy is a broad plan to dispose

of a business venture or financial asset. Exit strategies and other money management techniques

can greatly enhance their trading by eliminating emotion and reducing risk. Exit strategy also

creates a solid framework for the entire business cycle. which provides both practical and strategic

advantages across the board.

If we are going to fail in our business venture, the proponent’s second choice would be to

redesign it as a Salon Café. It is the most fitted type of business venture we can design after

Wellness Café. Redesigning will be easy for us because some supplies and equipment are the same

and some equipment that will no longer be connected to our business can be liquidated by selling

them to add funds for the Salon Café.

TRAINING AND DEVELOPMENT PROGRAMS

Training and development refers to educational activities within a company created to enhance the

knowledge and skills of employees while providing information and instruction on how to better

perform specific tasks.

1. Orientation - As new people in the workplace, we must guarantee that the employees'

obligations, including all corporate policies, are thoroughly understood. The fundamental

flow, norms, and dos and don'ts in the workplace. We also teach fundamental labor skills

such as how to utilize equipment and materials, how to manage supplies, and how to store

and operate a cash drawer.

2. Guidance and Observation - It is important to know that training your staff does not end

with the provision of instructions and orientation. We are advised to ensure that the

experienced staff, especially department heads continue guiding and observing the actions

of both the new and current staff. Guidance and observation helps to ensure that the new

employees are practicing what they have been taught. That is providing services to the

customers according to the best practices described in the training manual.

3. Personality Development Program - This entails all the aspects of knowing oneself,

understanding the behavior of other people and improving confidence in communicating

with others especially to customers.

4. Employee Evaluation - A performance review is an important exercise. Not only does the

program help to track the employee’s progress but it helps to determine if the

144
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City
an employee is a valued member of the team. Furthermore, a performance review evaluates

the employee’s attitude, efficiency plus their strengths and weaknesses. We have 2 ways

of approaching this; 1. We can request customers to leave a short comment about the food,

hosting and serving after they are done with their meal. These comments can be submitted

via on-site gadgets provided by the restaurant. 2. Supervisors/Managers can also provide

employee performance reports which contain data and information collected daily, weekly

and monthly. From this data, we can create a performance review of each employee.

5. Implementation of Team Building Exercises - Team building helps to create

opportunities for the employees to socialize outside the work environment. There are many

activities employees can do during team building exercises. Some of them include

competitions, parties and retreats among others. Doing this will not only help to motivate

the employees but it will help employees build better relationships thus improving

productivity and team work.

RE-ORGANIZATION

Reorganization is allowed under Chapter 11 of the bankruptcy code, which usually

involves a company or partnership. A chapter 11 debtor generally offers a reorganization plan to

keep his or her firm afloat while paying creditors over time. Chapter 11 can also provide relief to

businesses and individuals. The filing of a petition with the bankruptcy court serving the debtor's

domicile, home, or primary place of business is the first step in a chapter 11 case. A voluntary

petition is one that is submitted by the debtor, whereas an involuntary petition is one that is filed

by creditors who satisfy specific criteria.

REORGANIZATION STRATEGY

o Carry out market research.

Many businesses will never be the same again. And the long-term company strategy you

worked on last year has most certainly been replaced with a 30-, 60-, or 90-day strategic plan

aimed at getting you through the short term.

150
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

o Align your structure to the current market's requirements.

“It starts with creating a new mission or strategic plan for 2021—based on the current

market, the products selling now, and what customers want,” said McAlister. “Just because you

sold some items last year doesn't imply, they're still the appropriate products for 2021, or that

you're marketing them correctly.” A popular technique is to "socialize" some of the major changes

you want to make after you establish your new plan and before you put it into action. Establish a

core group of internal advocates and begin addressing the findings of your market research as well

as the need to better align the business for success. There should be no major shocks when you

deliver the realignment. Key employees are aware of the impending event, are aware of the reasons

behind it, and may assist in smoothing communication throughout the organization.

After that, you may realign your teams with your new mission and strategic strategy.

o Examine your abilities closely.

Examine your talent and evaluate if they are genuinely productive in their present jobs

while looking at your teams. Is their skill set, agility, and emotional intelligence sufficient to pivot

to a new job or set of responsibilities? Is what they're doing correct? Are they successful in

achieving their objectives? Is it possible for them to lead a team of people who work remotely? Is

it possible for them to lead a remote team? Your department's KPIs will be crucial in this regard.

Using other resources might also be a good idea.

151
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City
“Prior to the pandemic crisis, this would have been near-impossible. "What sort of talent

is now deemed "excellent talent" for your new organization?" is the number one question I advise

all executives to ask themselves.

o Actively communicate

After you've completed your reorganization, double-check that the new structure is

functioning properly. This necessitates both accountability and listening. Consider holding

monthly leadership meetings to evaluate your previous month's activities, what's working and what

isn't, where you might need assistance, and what you have planned for the next month.

“It's possible that your staff don't comprehend what you're attempting to accomplish if they

repeatedly fail to meet your objectives. Before moving forward with implementation, good leaders

must be excellent communicators and ensure that they and their team members are on the same

page.”

Bringing it all together: Organizations in need of support in any of these important areas

may need to enhance their leadership team or seek outside expertise. Interim executives with

demonstrated expertise and the relevant skill sets are easily accessible on an interim, fractional, or

project basis, including chief restructuring officers, chief human resources officers, and

organizational transformation consultants. Bringing in more leadership ammunition might be a

smart decision to ensure a smooth and timely restructuring.

PRODUCTION PROCESS

FOR BEVERAGES

Espresso

Time: 10 minutes
Total Time: 10 minutes

Step 1: CLEAN YOUR PORTAFILTER

Before dosing the coffee to your portafilter, make sure that the portafilter is clean and tidy. Both
moisture and leftover grounds might (and most likely will) make your future espresso taste over-
extracted = astringent and bitter.

Step 2: DOSE CORRECTLY

This should be pretty easy. With on-demand grinders you just need to push a button with your
portafilter or hand and the grinder will do your pre-set dose. If you want to be a really professional
and geeky barista, check your dose on a scale before distributing and tamping. This way you can
be quite sure that your extraction will be correct because your dose won’t be too much or little.

176
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

Step 3: DISTRIBUTE YOUR GROUNDS IN THE PORTAFILTER

Most likely your grinder will dose the grounds to the portafilter’s basket to a mountain or a pyramid
shape. This means that you have uneven distribution of the grounds so some parts of the basket
will have more coffee and some parts less if you don’t distribute them before tamping. Bad
distribution of the grounds might lead to channeling.

You can also use distribution tools if you want to get geeky. Distribution tools are a really great
way to enhance the consistency of your espressos and their extractions.

Step 4: TAMP EVENLY AND CONSISTENTLY

The aim of tamping is to remove any air pockets in the coffee puck and do this so that the puck is
completely leveled. Tamp so long and “hard” that you feel that the puck is compressed (in other
words it doesn’t go down anymore). Pay attention that the puck is horizontally leveled so that you
avoid channeling and over, under or uneven extraction.

177
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

Step 5: RINSE YOUR GROUP HEAD

Before inserting the portafilter to the group head, you might want to rinse the group head to remove
any old coffee from it. Easy way to keep your espresso machine clean. Rinsing will also make sure
that your group head is properly heated and this way you might be able to extract more of your
coffee.

Step 6: INSERT THE PORTAFILTER AND START BREWING IMMEDIATELY

After rinsing, insert the portafilter to the group head and start brewing IMMEDIATELY! If you
don’t start brewing immediately, the heat from the group head might “burn” the surface of your
coffee which leads to bitter notes in the cup.

Step 7: BE AWARE OF THE YIELD & BREW TIME

178
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

Now you are brewing your espresso. If you are using a volumetric machine, be aware of your brew
time. In the case of too short extraction time (under-extraction) or too long extraction time (over-
extraction) you might want to make a new espresso and/or check your grind size and dose. If you
are using a manual espresso machine, be aware of your yield e.g. if your espresso is running a bit
too fast, you are just diluting (making it milder) your espresso and possibly also over-extracting at
the same time.

179
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

Step 8: SERVE WITH A SMILE

If you follow these steps and you’re using a good brewing recipe, most likely you will have a tasty
espresso in the cup. It is important to remember that we baristas are in the hospitality business so
be sure to serve your customers well. Tell them a little about the coffee you’re using and what kind
of flavours they should be expecting from the espresso. And most important of all; SMILE. With
a tasty espresso served with a smile you can make someone’s day.

Step 9: DISCARD THE PUCK, CLEAN THE BASKET AND RINSE THE GROUP HEAD.
After serving, keep the places neat and tidy. Clean the basket from any old coffee and moisture,
rinse the group head and insert the portafilter back to the group head. It is much easier, faster and
nicer to make the next espresso when places are in order.

Whole Body Massage

Step 1: USE MASSAGE OIL.

It is essential to use oil when giving a massage. It helps your hands to glide easily over the skin,
so you don't cause pulling, pinching or any kind of pain to your partner/client.

Step 2: HAVE PLENTY OF TOWELS ON HAND.

Make sure you have plenty of fresh, clean towels on hand for use during the massage.

● First you will need to cover the surface you are working on with towels in order
to protect them from the massage oil (which can stain).
● Secondly, you will need towels to cover your partner/client's body as you work
on them. Ideally they should be stripped down to their underwear to leave as
much skin exposed as possible. Then you can cover them with a towel to protect
their modesty and to keep them warm while you are working on each body part.
● Thirdly, you will need extra towels to wipe the excess oil off you hands during
and after the massage.

181
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

Step 3: MAKE SURE THE ROOM IS COMFORTABLE.

It is essential that the room is comfortable for conducting your massage. If your partner/client
feels uncomfortable throughout the massage, they will not enjoy it as much!

● Make sure they have somewhere comfortable to lie down, such as a bed, a soft rug or a
proper massage table. Cover the surface with soft towels to keep them clean and free of
oil.

● Make sure the room is nice and warm. Remember that your partner/client will be partly
undressed for the duration of the massage, so you don't want them to be cold. Use a space
heater if necessary.
● Make sure the room you use for the massage is somewhere private where you will not be
disturbed by any other people, children or animals.

Step 4: START WITH THE NECK AND SHOULDERS.

Place a hand on either shoulder in the classic massage position and knead the thumbs deep into
the muscles of the shoulders. Use your fingers for grip, but don't press them into the collarbone,
as this can be painful.

182
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City
● When you've finished with the shoulders, use the press and release technique to
massage along the neck, all the way to the hairline. Remember to keep your
hands on either side of the spine.
● Now move around to stand in front of your client/partner's head, so their
shoulders are facing you. Make a fist with each hand, then rub the knuckles
gently but firmly across the tops of the shoulders, to release any tension,
● Next use your thumbs to press and release along the tops of the shoulders and up
the back of the neck.

Step 5: DO THE FEET.

Start massaging the soles of the feet by wrapping both hands around the foot and using your
thumbs to apply pressure.

● Pay special attention to the arch of each foot, as this area tends to accumulate a
lot of tension, but also massage the heel and the ball of the foot.
● When you get to the toes, grab each one individually and give it a gentle pull,
this helps to release any tension.
● Be aware that not everyone likes having their feet touched, and some people are
very ticklish, so ask your partner/client before you touch their feet

183
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

Step 6: WORK YOUR WAY UP THE LEGS.

When you're done with the feet, move onto the back of the legs. Give each leg a couple of long,
relaxing strokes to begin with, all the way from the calf to the upper thigh.

● Apply light pressure with both hands, smoothly stretching the skin. This
technique is known as effleurage, and is a good way to ease into the massage.[2]
● Then, cover the leg you're not currently working on with a towel and focus on
massaging the calf of one leg. Use a kneading technique (like kneading bread) to
work the calf muscle.
● Move up towards the thigh and repeat the kneading technique here. Then press
the heel of your hand into the skin and very slowly move it along the thigh. You
should always move in the direction of the heart.
● Cover the leg you just finished working on with a towel (to keep in heat) and
repeat the massage on the other leg.

Step 7: MOVE FROM THE LOWER TO THE UPPER BACK.

Use the effleurage technique described above to perform long, soft strokes, going from the
top of the glutes to the base of the neck.

● Place the palm of each hand on either side of the spine and work your way
up, keeping your hands parallel to one another. When you reach the top of
the back, fan your hands outwards across the shoulders, as if outlining the
top of a heart.
● Return to the lower back and use a kneading motion to work the large
muscles on either side of the spine. These areas tend to build up a lot of
tension, so make sure to spend some time here.
● Next, use a "press and release" technique to work your way up the back.
This involves pressing your fingertips firmly into the flesh of the back
before quickly releasing. When the pressure is released, your
partner/client's brain will release a rush of pleasurable chemicals.

184
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City
● When you get to the upper back, have your partner/client bend their
elbows so their shoulder blades stick out. This will give you better access
to the muscle around the edge of the shoulder blades, which tends to
harbor a lot of tension and knots.
● To work on the knots, use a thumb or single finger to press and release
repeatedly around the problem area.

Step 8: MASSAGE THE HANDS AND ARMS.

When you're done with the neck and shoulders, move onto the arms, working on one at a
time.
● Hold your partner/client's wrist in your left hand, so their entire arm is
lifted from the bed. Then use your right hand to sweep along the back of
the forearm, along the tricep and over the shoulder, coming back on the
opposite side.
● Now, switch to holding their wrist in your right hand, then sweep your left
hand along their forearm and bicep, then over the shoulder and down the
opposite side.
● Place your partner/client's arm back on the bed, the use your fingers and
thumbs to gently knead the forearms and upper arms.
● To massage the hands, take their hand in yours and massage the palm with
your thumbs, using small circular motions. Then, take each finger in turn
and slowly slide from the knuckles to the nail. Pull each finger firmly, but
not so hard that you cause it to crack!

185
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

Step 9: END WITH THE HEAD.

Ask your client/partner to flip over so you can work on the head and face. Give them a moment
if they need to rearrange their towel.

● Use your thumbs to gently massage the top of the scalp. For added pleasure, use
your nails to scratch slightly.
● Next, massage the folds and lobe of each ear between your thumb and forefinger.
Then use your fingertips to gently swipe along the contours of the cheekbones
and not.
● Put your hands beneath your partner/client's head and lift it slightly from the bed.
Use your fingers to find the small hollows when the neck meets the base of the
skull. Apply firm pressure with your fingertips, then release. Repeat several
times.
● Put your hands underneath the jaw and pull the head gently upwards, to stretch
the neck muscles. Now, gently press the center of the forehead (between the
eyebrows) with your fingertips and release. Repeat for 30 seconds.
● Next use your fingertips to gently massage the temples, moving in slow circular
motions. The temples are an important acupressure point, so this helps to relieve
tension.

186
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

Step 10: WORK SLOWLY.

Never try to rush through the massage - it should be a luxurious, relaxing experience for your
partner/client.

● Dedicate time to each individual body part, giving it your full care and attention,
and keep your strokes long, smooth and slow.

Step 11: KEEP YOUR HANDS IN CONTACT WITH THE SKIN AT ALL TIMES.

Your hands should be in contact with your client/partner's skin for the full duration of the
massage - this keeps the momentum flowing and never breaks the atmosphere of relaxation.

● Even if you have to grab a towel, a drink of water or more massage oil during the
massage, try to keep one hand on the skin at all times.

187
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City

Step 12: COMMUNICATE.

Communication is key throughout a massage. What feels good to you mightn't feel good to the
other person, so it's important to ask them how they're feeling and to really take on board their
responses.

● Ask them how the pressure feels, where they would like you to work on and
what they enjoy the most. However, try to speak in a low, soothing voice to
maintain the calm atmosphere.

Step 13: PAY ATTENTION TO KNOTS.

If the person you're working on has a lot of knots in their back, it's a good idea to work on
them to try to release them.
● However, make sure to ask your partner or client first, as some people find
this too painful and would rather not ruin their relaxing massage.

188
New Era University
COLLEGE OF BUSINESS ADMINISTRATION
No. 9 Central Avenue, New Era, Quezon City
● The knots may feel like large, circular areas of tightness, or tiny bumps
which almost feel like peas beneath the skin. Try to get directly on top of
the knot, otherwise it can slip out from beneath your fingers.
● Apply increasing pressure to the knot, then rotate your thumb or finger to
try to undo it. You may need to rotate in opposite directions in order to
work it out fully.
● Try not to get too involved in any deep tissue work though - this is best
left to qualified massage therapists. Stick to what feels good for you
partner/client.

Step 15: AVOID THE SPINE AND ANY BONES.

Never apply pressure to the spine or any other bones. This will feel unpleasant and
uncomfortable for your partner/client and has the potential to cause more harm than good.

● Besides, it is the muscles you really need to work on, as this is where the most
tension collects. Stick to the muscles and you can't go wrong!
