Introduction:
Slaughter is the process for killing of animals intended for human consumption. The term slaughter is
also used to depict killing of animals by bleeding. Most farm animals are killed by bleeding.
animals would be killed for food; however, they Might also be slaughtered for other reasons such as
being diseased and unsuitable for consumption. The slaughter involves some initial cutting, opening the
major body cavities to remove the entrails and offal but usually leaving the carcass in one piece.
Objectives
4. To be able to see the process of meat inspection during the ante-mortem and post mortem
inspection.
Methodology
A visit to the slaughterhouse of every municipality to observe and record every step being made during
the slaughtering process. Take a picture of every event or things that you are going to evaluate like
conduct of meat inspection, picture of the slaughtering process in swine and cattle. Picture of the
slaughtering house the equipments and materials used and picture of the meat moinspector and you,
also the meat van or vehicle being use during the transfer of meat from the slaughterhouse to the
market for sale of meat.
