5 cookie secrets

Are you ready to take your cookie game from mediocre to exceptional?
I’m spilling the dough on how to get you there.

Stop greasing your baking sheets.

Why? Greasing your baking sheet with a nonstick baking spray can cause
your cookies to spread.

The solution: use a sheet of parchment paper or a silicone baking mat.

Measure your flour correctly using the spoon and

Why? Gone are the days of sticking the measuring cup into the flour bag
and scooping it out.
The solution: use a spoon to scoop the flour into the measuring cup and
use the back of a knife to level off the top of it.

Pro tip: use a food scale to measure out your flour. 1 cup flour = ~130 grams

This tip might be a little controversial but…Use Cold Butter.

Why? Use cold butter if you want thick cookies. (I LOVE thick cookies, not the
thin, flat, crisp cookies). Most cookie recipes call for softened butter, but my
cookies work best with cold butter.

Too cold of butter (frozen butter)

= won’t cream properly.

Too soft of butter

= dough will be heavy and greasy.

5 Use a mix of brown sugar & granulated white sugar.


In almost all of my cookie recipes, I use more brown sugar than white.
This is because the brown sugar creates a chewier, softer and more moist
cookie compared to only using granulated sugar.
