VINIFICATION PROCESS:
Made from free run must from the best quality grapes from our best
vineyards. Controlled fermentation at 16oC for 21 days. Once finished, the
thick lees are eliminated and it is aged on its fine lees in stainless steel
tanks for 5 years, with a periodic "bâtonnage" during the first year.
