Basic Vegetable Fried Rice:

Ingredients:

 2 cups of cooked and cooled rice (preferably day-old rice)


 2 tablespoons vegetable oil or sesame oil
 1 small onion, finely chopped
 2 cloves of garlic, minced
 1/2 cup of carrots, diced
 1/2 cup of frozen peas
 2 eggs, beaten
 2-3 tablespoons soy sauce (adjust to taste)
 Salt and pepper to taste
 Optional additions: chopped scallions, sliced bell peppers, diced tofu, or cooked chicken or shrimp
