SIMPLE FRIED RICE FROM LEFTOVERS

Ingredients Equipment
 large skillet
 2 or more tablespoon canola oil,  measuring spoons
use whatever oil or fat you  measuring cups
have, even bacon grease!  large spoon
 ½ onion, small dice.
 cutting board
 3 cups frozen, canned, or fresh
 knife
vegetables, diced medium
 2 to 3 cups cooked rice (white
or brown)
 2 large eggs
 1-2 cups cooked protein of
choice (use pork, chicken,
shrimp, tofu), optional
 1/4 cup low-sodium soy sauce
(or to taste)

Fried Rice is a great way to clean out your fridge, and use what you have on hand.
Best yet, it is really easy and fast to make, and only requires basic cooking
equipment. To make rice, read below.

Prep Time: 30 minutes (if you need to make the rice)


Total Time: 45 minutes
Makes 4 Servings

Instructions:

1. Gather ingredients and prepare vegetables as needed.


2. Heat 1 tbsp oil in a skillet over medium heat, tilting the pan to coat.
3. When the oil is hot, break the two eggs into the center and immediately begin
stirring the eggs with a wooden spoon or silicone spatula. Once solid, remove to
your cutting board and dice small. Wipe the skillet clean.
4. If you are cooking your optional protein, do so now in oil.
5. Add another tbsp oil and coat skillet. Add the onion and cook, stirring
occasionally, for about 5 minutes. Add other vegetables and cook until soften.
6. Add the rice and stir to combine, cooking for another 2 to 3 minutes.
7. Drizzle the mixture with soy sauce, mix well. Add more oil if it is sticking
8. Gradually stir the eggs and protein back into the skillet, distributing the eggs
throughout the vegetables and rice.
9. Serve hot, sprinkled with garnishes of cilantro, scallions, peanuts or sesame seeds
if desired.
