    Dimethoate is a widely used organophosphate pesticide. This study investigated the residues of 14C-labeled dimethoate in tomatoes and processed tomato products over time. Tomatoes and products including paste, ketchup, and puree were treated with 14C-dimethoate and sampled up to 30 days later. Residue levels declined over time in all samples but persisted in processed products longer than fresh tomatoes, with over 50% of the original dose remaining in paste and ketchup after 30 days. The study demonstrates the potential for dimethoate residues to remain in processed tomato products unless careful consideration is given to pre-harvest intervals.
