BURSTING WITH BLUEBERRIES MUFFINS

INGREDIENTS
 2 cups flour
 2 teaspoons baking powder
 ½ teaspoons baking soda
 ¼ teaspoon salt
 ½ cup (1 stick) butter, softened
 1 cup sugar
 2 eggs
 1 teaspoon vanilla extract
 ½ cup milk
 2 cups blueberries

DIRECTIONS
1. preheat oven to 375F (190C)
2. whisk the flour, baking powder, baking soda, and salt in a medium
bowl
3. Cream the butter and sugar in a separate (large) bowl an electric mixer
until fluffy. Beat in the eggs one at a time. Stir in the vanilla
4. Blend in half the flour mixture, then half the milk
5. Add the rest of the flour and milk, and blend
6. Add the blueberries to the batter, and use a rubber spatula to fold them
in
7. Line a 12-cup pan with paper liners or grease the cups. Fill the muffin
cups almost to the top with the batter
8. Bake for 25 min. or until light brown
9. ENJOY!!!!
Streusel Topping
In a bowl, mix up

 6 tablespoons flour
 2 ½ tablespoons melted butter
 1 tablespoon sugar
 1 tablespoon brown sugar
 1/8 teaspoon cinnamon
 ¼ teaspoon vanilla extract

You can do this with a fork or your clean hands. Sprinkle the
streusel on top of the muffins before baking
