Easy Basic Pancakes

Making pancake batter from scratch is so
simple that you'll wonder why you never did it
before!

Ingredients

1 cup all-purpose flour, (spooned and


leveled)

2 tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 cup milk

2 tablespoons unsalted butter,


melted, or vegetable oil

1 large egg

1 tablespoon vegetable oil

Assorted toppings, such as butter,


maple syrup, confectioners' sugar,
honey, jams, preserves, sweetened
whipped cream, or chocolate syrup

Directions

Step 1

Preheat oven to 200 degrees; have a baking


sheet or heatproof platter ready to keep
cooked pancakes warm in the oven. In a small
bowl, whisk together flour, sugar, baking
powder, and salt; set aside.

Step 2

In a medium bowl, whisk together milk,


butter (or oil), and egg. Add dry ingredients
to milk mixture; whisk until just moistened
(do not overmix; a few small lumps are fine).

Step 3

Heat a large skillet (nonstick or cast-iron) or


griddle over medium. Fold a sheet of paper
towel in half, and moisten with oil; carefully
rub skillet with oiled paper towel.

Step 4

For each pancake, spoon 2 to 3 tablespoons


of batter onto skillet, using the back of the
spoon to spread batter into a round (you
should be able to fit 2 to 3 in a large skillet).

Step 5

Cook until surface of pancakes have some


bubbles and a few have burst, 1 to 2 minutes.
Flip carefully with a thin spatula, and cook
until browned on the underside, 1 to 2
minutes more. Transfer to a baking sheet or
platter; cover loosely with aluminum foil, and
keep warm in oven. Continue with more oil
and remaining batter. (You'll have 12 to 15
pancakes.) Serve warm, with desired
toppings.

Pancake Variations

Step 1

BUTTERMILK: In step 1, add 1/2 teaspoon


baking soda to dry mixture. In step 2, replace
the milk with low-fat buttermilk.

Step 2

YOGURT: In step 1, add 1/2 teaspoon baking


soda to dry mixture. In step 2, replace the
milk with 2/3 cup plain low-fat yogurt and
1/3 cup milk.

Step 3

WHOLE-GRAIN WITH YOGURT: In step 1,


replace the all-purpose flour with 1/2 cup
whole-wheat flour, 1/4 cup each cornmeal
and wheat germ, and 1/2 teaspoon baking
soda. In step 2, replace the milk with 2/3 cup
plain low-fat yogurt and 1/3 cup milk.

Fantastic recipe! This is my go to recipe for pancakes.


I made them with the yogurt substitution step the
last time and they were even fluffier. I added some
blueberries as well.

easy and they came out exactly like the picture. And
they taste awesome. Used the steps. Thank you so

This was amazing. I’ve never been good at making


pancakes but hate the prepackaged ones. This was
easy and they came out exactly like the picture. And

I made them for supper. Read the recipe today.


Sounded so good i had to make them right away,
they are really good. So moist and fluffy. I think i
wont be buying store bought mix anymore.

Omg these were so goood! They were amazing! I


think I added a bit to much baking powder but either
way they turned out delicious. 10 out of 10 will make

The recipe took forever to make but was really good.


It created not many (10 for us) and I would advise
doing a double batch.

I just made them and finished eating them. They


were absolutely delicious. “Dem mash up“ as we say
here. Definitely will be my go to recipe. For the
people that said they were “flat and tasteless”... you
need to try the recipe again. I followed the video

I have been using this pancake recipe for a very long


time now and I am loving it! It is simple and easy to
make. I uses room temperature of full cream milk and
it turns out soft and really delicious to eat. Pancake is
one of my favourite food and I am so glad I found this
one all time recipe thank you Martha. You are the
best!

I was out of milk, so I used 2/3c plain greek yogurt


and 1/3c oat milk! I also added a few blueberries.
They were so fluffy and delish!

So my friend came over for a sleep over and we


wanted pancake for breakfast but we spent ages
arguing over who will make it because NO ONE
wants to make them. Then we agreed finally that
we’ll all make them and we spent ages finding a
recipe and gathering ingredients and measuring
carefully and mixing till it was perfect. Then we used
a shaper to make the heart shaped and they took
ages to make. And now, finally, the Herculean task of
making pancakes is over and OH MY GOD they’re SO
GOOD I JUST HAD TO WRITE A REVIEW. They’re
just melting in my mouth and so fluffy. Martha
Stewart you are a genius.

This is my new go to recipe for pancakes. They are


much tastier than the ones I normally make with
bisquick. It is a basic mix so you can add your favorite
toppings or add your favorite spices to the batter.

in my third trimester of pregnancy and had a sudden


craving for pancakes with maple syrup, macerated
strawberries and whipped cream. whipped these up
in no time with little mess but found they were a
little bitter. i figured it was the baking soda and went
back to review the recipe and seen that it called for
baking POWDER (pregnancy brain anyone?) also
added a little vanilla because everything is better
with vanilla! recommend these highly but use less
baking soda or try the recommended baking powder
lol

No problems with this recipe at all. Perfect and fluffy.


The negative comments are hilarious. Maybe you all
should step away from the kitchen if you can't even
make these. Oh, and the one saying she left her
brains in prison? Where did you lose yours? Maybe
learn to read. The oven was to keep the cooked
pancakes warm while you finished the other batches.
Especially if you were only using a skillet to make
them and not a long griddle.

I tried this recipe last evening when, on a whim, I


decided to have breakfast for dinner. The pancakes
puff up so nicely on the griddle and the result was
the perfect spongey, fluffy cake. While cooking, I
tossed a 1/2 cup of frozen berries into another pan
(use a little water to deglaze) and this creates a tart,
but sweet, berry topping for the pancakes. I wish I
had a picture to post, but it turned out so pretty and
delicious. Will make again!
