Burger Bun Recipe

Ingredients 235 ml milk 120 ml water 55 g butter 560 g all-purpose flour 7 g instant yeast 25 g white sugar 9 g salt 1 egg Directions In a small saucepan, heat milk, water and butter until very warm, 120 degrees F (50 degrees C). In a large bowl, mix together 1 3/4 cup flour, yeast, sugar and salt. Mix milk mixture into flour mixture, and then mix in egg. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Divide dough into 12 equal pieces. Shape into smooth balls, and place on a greased baking sheet. Flatten slightly. Cover, and let rise for 30 to 35 minutes. Bake at 400 degrees F (200 degrees C) for 10 to 12 minutes, or until golden brown. For Hot Dog Buns: Shape each piece into a 6x4 inch rectangle. Starting with the longer side, roll up tightly, and pinch edges and ends to seal. Let rise about 20 to 25 minutes. Bake as above. These buns are pretty big. I usually make 16 instead of 12.

Banana Crumb Muffins


Ingredients 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 3 bananas, mashed 3/4 cup white sugar 1 egg, lightly beaten 1/3 cup butter, melted 1/3 cup packed brown sugar 2 tablespoons all-purpose flour 1/8 teaspoon ground cinnamon 1 tablespoon butter

Directions Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Pillow Soft Dinner Rolls


Ingredients 4-1/2 teaspoons active dry yeast 1/2 cup warm water (110 to 115) 2 cups warm milk (110 to 115) 6 tablespoons shortening 2 eggs 1/4 cup sugar 1-1/2 teaspoons salt 7 to 7-1/2 cups all-purpose flour Directions

In a large bowl, dissolve yeast in warm water. Add the milk, shortening, eggs, sugar, salt and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes (dough will be sticky). Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Turn onto a lightly floured surface; divide into 24 pieces. Shape each into a roll. Place 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 30 minutes. Bake at 350 for 20-25 minutes or until golden brown. Remove to wire racks. Yield: 2 dozen.

Hot Dog Rolls


Ingredients: 1 Tbsp Castor sugar 2 1/2 Tsp Active dry yeast 1/4 Cup Water, lukewarm 1 Cup Milk, lukewarm 2 Tsp Vegetable oil 2 Tsp Salt 3-3 1/2 Cups Plain white flour 1 Egg yolk (+ 1 Tsp water), for the egg wash

Method: 1. In a big bowl, combine sugar, yeast and warm water. 2. Stir to dissolve and let set until bubbly, about 5-10 minutes. 3. Add in milk, vegetable oil and salt. 4. Gradually add the flour and mix thouroughly. 5. Once 3 cups have been incorporated, add the remaining flour a tablespoon at a time until the dough begins to pull away from the sides of the bowl. 6. Turn dough out onto a floured surface and knead for 10 minutes, until smooth and supple. 7. Place in a lightly oiled bowl and cover with a dishtowel. 8. Let rise until doubled, about 1-1 1/2 hours. 9. Gently remove the dough from its bowl onto a floured surface. 10. Flatten it slightly into a large rectangular log. Divide dough into thirds and divide each third into three equal pieces (cover unworked dough with a clean dishtowel while shaping). 11. Gently flatten dough into a long rectangle. Fold left and right sides to meet in the center. Fold the top and bottom sides towards the center. Keep pinching the edges together, pulling the dough into a tight roll shape. 12. Repeat until you have 9 rolls. 13. Place hot dog buns on a parchment-lined baking sheet and cover with a dishtowel. 14. Let them rise for 30 minutes or until doubled in size. 15. Preheat oven to 200C (400F). 16. Brush the buns with the egg yolk and water mixture (egg wash). 17. Bake for 20 minutes.

18. Remove to a rack to cool before slicing.
