120 g Flour
200 g Elle & Vire
90 g Sugar
Professionnel® French
6 g Baking Powder Cream Cheese
3g Salt 75g Icing Sugar
1g Zest Mandarine
60 g Oil
30 g Water
60 g Orange Juice
60g Yolk
5 g Vanilla Extract
120 g Egg white
90 g Caster Sugar

Shift the dry ingredients and run mandarine zest. Mix wet
ingredients to dry mix and make a lump free paste. Make
french meringue with egg white and caster sugar. Achieve
medium peak. Take 1/3rd of the meringue and mix it with
the paste to loosen it up. Add the remaining meringue in
two parts, folding very gently. Baking Instructions - 160°C,
Time 30 + after 5 mins Once the cake is cooled down, fill it
with cream cheese filling and roll it like a cylinder. Freeze
and cut it into small rolls and serve.

using a paddle attachement in mixing bowl add
cream Cheese and icing sugar. whip together until
well Blended and creamy.
