COOKIE PROJECT AT A GLANCE


1. INTRODUCTION

Food industry has undergone remarkable changes, bakery products like cookies and other
extruded food productshave taken considerable share in day-to-day food products.
Cookies have always been favorite with tiny tots and the people of all ages. As
Population of the country is growing; the demand of cookies is also growing
simultaneously, day by day. Thus, there is sufficient potential to venture the project to
manufacture cookies in living standard; people are gradually switching over the richer
and fine product in form of cake/cookies.

2. INSTALLED CAPACITY

Installed capacity of theproject is 864 MT (120 kg/hr * 24 hrs * 300 working days) of
cookies based on effective utilization of 300 working days per annum.

3. MANUFACTURING PROCESS

All the ingredients i.e. wheat, flour, fat, sugar, eggs, essence etc. are mixed in the Planetary
Mixer. This mixture is then transferred to the hopper of Cookies Drop Machine where the
cookiesof desired shapes areformed and collected in trays.Thetrays are loaded onthe
oven trolley, which are then move in the oven. The oven is preheated to the desired
temperature. The cookies take about 12-15 minutes to bake. The baked product is allowed
to cool for a few minutes and finally packed for dispatch.

4. RAW MATERIAL

Main required raw materials are wheat, flour, fat, sugar, milk powder, flavours etc.,
which are easily available in ample quantities indigenously.

5. MARKETING

Cookieshaveever-increasingdemand inthemarket.TheMarketingsetupof about50


distributorsisenoughtosell900tonsofcookiesperannum.Moreoverthereareonlyfew
organized units who manufacture cookies. Cookies are currently manufactured in small
bakeries that are not organized at all and their products are of non-standard size, weight,
shape and unstable quality.
