The Culinary Marvel of Fried Kangkong
Ingredients:

1 bunch of kangkong (water spinach), washed and chopped into bite-sized pieces
2 cloves garlic, minced
1 small onion, finely chopped (optional)
1 red chili, sliced (optional, for spice)
2 tablespoons cooking oil
2 tablespoons oyster sauce
1 tablespoon soy sauce
1 teaspoon fish sauce (optional, for added flavor)
Salt and pepper to taste
Instructions:

1. Prepare the Kangkong:


Wash the kangkong thoroughly under running water to remove any dirt or
impurities. Drain well and chop it into bite-sized pieces, separating the leaves from
the stems.
2. Heat the Oil:
Heat the cooking oil in a large pan or wok over medium-high heat. Allow the oil to
become hot but not smoking.
3. Sauté Aromatics:
Add minced garlic to the hot oil and sauté until it becomes fragrant and slightly
golden. If desired, add finely chopped onions and sliced red chili for added flavor
and spice. Stir fry for a minute or until the onions become translucent.
4. Add Kangkong Stems:
Add the chopped kangkong stems to the pan. Stir fry for a couple of minutes until
they start to soften but still have a crunch.
5. Add Kangkong Leaves:
Add the kangkong leaves to the pan. Stir fry continuously until the leaves wilt and
the stems are tender. Be careful not to overcook; kangkong cooks quickly, and
overcooking can make it mushy.
6. Season the Dish:
Pour in the oyster sauce and soy sauce. If you're using fish sauce, add it at this
point. Stir well to ensure the kangkong is evenly coated with the sauces. Taste and
season with salt and pepper as needed. Remember, oyster sauce and soy sauce
already contain salt, so adjust accordingly.
7. Final Stir-Fry:
Continue to stir-fry for another minute or two, allowing the kangkong to absorb the
flavors of the sauces and aromatics. Ensure that the kangkong is cooked but still
vibrant green and slightly crisp.
8. Serve:
Transfer the fried kangkong to a serving dish. Garnish with additional chili slices if
you prefer it spicier. Serve hot as a delightful side dish with rice or as a
complement to your main meal.
