FRUIT CAKE

Steam raisins first. Soak fruits in fresh orange/ 3 TBS sunquick mixed with little 1TBS water
250g Butter
200g brown sugar
670g mixed fruits + 1 TBS almond nibs
280g flour + 1 TSP mixed spice + ½ tsp bicarbonate of soda + pinch of salt
1 TBS cherries, cut into pieces
4 big eggs
2 drops almond essence
1 TBS caramel

Method
Preheat oven to 160
1 cream butter and sugar. Add caramel once almost mixed
2 add eggs and almond essence
3 mix fruits with flour and add in alternatively.
4 BAKE 1 Hour. Then lower temp to 130* and bake 50 minutes.
