• English service- Knifes and spoons are
placed on the right side and forks are placed
on the left side. A bread knife is positioned
on the bread and butter plate keeping at a
right angle to the forks. Wine glasses are
provided to the left side of the water glass
or goblet.
• Compromise-This service combines both
the Formal and Modified English Service.
The appetizer is served in single portions
from the kitchen as in Formal Service. The
main course is served in Modified English.
• Buffet style-Start with plates, followed by
side dishes, main dish, vegetables, salads,
breads, and relishes.
• Apartment or blue plate service - When the
blue plate service is used, sometimes
referred to as the blue plate special, a salad
or dessert may sometimes be included but
served on a separate plate than the main
dish.
• Country style- Country style service could
refer to a buffet or passing of dishes around
a table at mealtimes. Country style service
might also be eating with hands and picnic
type foods.
