Ingredients:
● Almonds: 200g
● Desiccated Coconut: 60g
● Cocoa Powder: 2 tbsp
● Dates: 200g (pitted)
● Dark/Milk Chocolate baking chips: 150g
● Dried Raisins or Cherries: A handful (optional for filling)
● Pastry Sheet
Instructions:
Preparing Almonds:
Wash the dates thoroughly in water. Make sure all pits are removed.
In a food processor, grind the roasted almonds, desiccated coconut, and cocoa
powder until you have a fine powder.
Add the pitted dates to the almond-coconut-cocoa powder mixture in the food
processor.
Grind the mixture until a moist dough is formed. If the mixture seems too dry, you
can add a few more dates.
Forming the Balls:
Take small portions of the dough and roll them into balls. If you like, you can
insert a dried raisin or cherry and some nut pieces into the center of each ball to
add texture.
Melt the dark or milk chocolate over a low flame or use a double boiler to avoid
burning the chocolate.
Dip each ball into the melted chocolate, ensuring it's completely covered.
Place the chocolate-coated balls on a tray lined with a pastry sheet or parchment
paper.
Refrigerate the chocolate balls for 2 hours, or until the chocolate has fully set.
