Remove from oven; cool and split. Combine remaining ingredients, 1/2

both chicken mixtures.

Bring chicken broth to boil in large skillet. Add spinach and basil and
toss until just wilted, about 45 seconds. Drain well. Squeeze out any
remaining liquid. Puree spinach mixture with remaining 3/4 cup cream until
smooth. Blend in 1/4 of chicken mixture.

Preheat oven to 350 deg. Line 9x5-inch loaf pan with plastic wrap, leaving
5-inch overhang. Pour half of white chicken mixture into pan. Cover with
half of spinach mixture. Using knife, swirl through layers to create marble
effect. Repeat with remaining chicken and spinach. Tap pan on work surface
to settle pate. Fold overlapping plastic over top of pate. Cover pan
tightly with foil. Place loaf pan in deep roasting pan. Pour enough water
into roasting pan to come 2/3 up sides of loaf pan. Transfer to oven and
bake 1 1/4 hours. Cool. Weight pate with heavy object and refrigerate
overnight.

Unmold pate onto platter. Let stand at room temperature 1 hour before
serving. Pass Tomato & Garlic Sauce separately.

Preheat oven to 400°F. Cut the chicken into thin, finger-size strips.

1/2 cup unsalted butter -- melted

Cut each breast in half lengthwise and then cut each half crosswise into

parchment squares. (Ends up looking like small envelope, with flap tucked
under bundle)

Place bundles seam side down, in single layer on steamer rack. Set rack in
large pot or wok of boiling water. (Do not let water level reach the
bundles) Cover and steam about 7 minutes or until chicken is tender. Serve
immediately

Submit a Recipe In a large bowl, combine buttermilk, 1 T of the lemon
juice, Worcestershire, soy sauce, paprika, pepper, and
garlic. Add chicken strips and toss to coat. Cover
and marinate at room temperater for 1 hour, or
refrigerate overnight.

2. Preheat oven to 350F. Drain chicken well. In a


large shallow bowl, toss bread crumbs with sesame
seeds to mix. Roll chicken in crumbs to coat.
Arrange in a single layer on a greased baking sheet.
Drizzle melted butter over chicken fingers. Bake for
35 minutes.
3. Meanwhile, in a nonalluminum saucepan, combine
plum preserves, mustard, horseradish, and remaining 1
T lemon juice. Melt over low heat, stirring, until
smooth.

4. Serve chicken fingers hot or warm, with plum sauce


for dipping, on the side.

Site Map Cut dough crosswise into 5 equal sections. If you want to serve it as

In a medium bowl place the chicken, cheese, red bell peppers,
Roma tomatoes, green chile peppers, and cilantro. Mix the ingredients together
well.
Preheat the oven to 400 °.
For each section of the filo dough (cover the other sections with a
slightly damp cloth and keep them in the refrigerator), separate the
pieces and lay them out flat on a large surface (work quickly). Brush all
the pieces with the melted butter. Turn them over and brush the other
side.
Place a teaspoon of the chicken mixture at one end of each piece of
dough. Fold the bottom left corner over the filling so that the bottom
edge lines up with the side edge. Continue to fold the dough up in this
manner (as you would fold a flag,) so that a multi-folded tringle is
formed. Keep the completed triangles under a damp cloth.
On an oiled baking sheet, place the filo trangles and bake them for
20 minutes, or until they are a golden brown.
Serve the trangles with the Corn Relish and Guacamole on the side.
RELISH: In a medium large saute pan place the olive oil and heat in on medium
until it is hot. Add the remainder of the ingredients and saute them for 10
minutes, or until the corn is done. Makes approximately 4 cups.

Combine 1/4 c water, cliantro, sliced jalapeno, lime juice and olive oil
in blender. Blend until smooth. Season to taste with salt and pepper.
Place chicken in shallow baking dish. Pour marinade over, coating
completely. Cover and refrigerate 4 hours.
Main Dishes Preheat broiler. Remove chicken from marinade; discard marinade. Broil
Soups & Stuff chicken until cooked through, about 3 mintues per side. Set chicken
aside. Lightly brush both sides of onion and eggplant slices with

The author writes: "This food processor recipe makes about 4 lbs. -
enough pate to pack into crocks for holiday gifts your friends will
enjoy. The amount of butter can be reduced for a less expensive
version, but it won't be as smooth. Do not use margarine. If you
don't have homemade chicken stock, use a bouquet garni to enhance the
instant kind. In place of prepared "fine spices," you may substitute
a pinch each of white pepper, red pepper, mace, sage, marjoram,
rosemary, cinnamon, nutmeg and tarragon."

For bouillon "stock," bring water to boil with chicken cubes. In a


cheesecloth bag, tie parsley, bay leaf, peppercorns and thyme; place
in stock. Simmer for 20 minutes. Remove bag and discard.

For pate: Marinate liver in cream for 8 hours or overnight in


refrigerator. Rinse liver in cold water several times; cover with
fresh cold water and bring to the boiling point. Immediately drain
water, fill with fresh cold water and bring to boil again. Repeat
procedure twice more. (This removes bitter taste.)

Now add chicken stock to cover liver and bring to boiling point. Turn
down to simmer and cook 20 minutes. If time allows, let liver cool
in the stock. Drain well.

Finely chop onions in food processor. Saute the onions in some of the
butter until transparent but not colored. In a very large mixing
bowl, blend all ingredients except the fine spices with liver and
remaining butter.

Place batches of this mixture in food processor and process until very
smooth. Repeat as needed. Add fine spices; taste and adjust
seasonings. Some salt may be required. (When tasting warm, the
seasonings are more acute than when cold. So add a bit more to
achieve desired taste.) Taste for cognac and brandy; adjust
accordingly.

Pack into well-buttered or oiled molds; gently tap to release any air
pockets. Cover with foil; refrigerate. To unmold, immerse to half
their depth in hot water, counting 10 seconds, then invert onto a
platter. Garnish with carved flowers of radishes or tomatoes, if
desired. Or spoon pate into a piping bag and squeeze out in swirls
onto crackers or toasted bread rounds. Garnish each with a tiny
parsley leaf.

To store several weeks, pour melted butter completely over top of


pate in mold. Cover with foil; refrigerate. To serve, remove and
discard hardened butter from top and unmold as above.

To glaze with Madeira: Heat beef stock and add packaged, unflavored
gelatin. Allow to dissolve and add Madeira wine or dry sherry. Set
aside to thicken slightly. With a pastry brush, paint glaze all over
unmolded pate. Several coats may be required for an even glaze. Or
pour glaze gently over pate by setting pate on a rack over a plate
(to catch the overflow).

To vary, fold in walnuts or pistachios after blending pate


ingredients in food processor. Then add the fine spices and taste.

Yield: About 4 lbs., or enough for a cocktail party of 16.

Preparation: ÿÿÿÿ Process all marinade ingredients in a blender


until smooth. Marinate chicken, refrigerated, overnight. Grill over hot
coals until done, brushing frequently with coconut milk. Serve garnished
with cilantro sprigs, accompanied by steamed rice and bowls of dipping
sauce.

DIPPING SAUCE: ÿÿÿÿÿound first 4 ingredients to a paste with


mortar and pestle, then dissolve in vinegar. Alternatively, put it all in a
blender and blend until smooth. Float the green onions and cilantro on top.
