performance, this manual describes all necessary information to set up the machine
and all the required devices for a right and prolonged usage. We invite you to read
this manual carefully and follow it thoroughly. PANEMOR will not be responsible for
any damage to persons and/or things, caused by the misuse of the machine due to
the inattention and neglect of the suggestions written and shown in this manual.

PANEMOR produces high quality and qualified to apply ISO 9001:2000 Quality
Management System. The machine has been built according to the required TSE,
TSEK, CE and GOST-R.
WARRANTY
PANEMOR guarantees that the machine has been tested very carefully before
delivery and gives warranty for the machine for 12 (twelve) months. The electrical
parts of the machine are out of the scope of this warranty.
Removing the protective parts of the machine, especially the safety devices,
will cancel the guarantee condition and consequently the manufacturer will not be
responsible from any damage caused to persons and/or things due to this pilfering or
cancellation.
When delivered, check immediately if the machine has been damaged during
the transport and, in such case inform the forwarder;

Then, check whether the required optional parts are complete and if some
parts are missing, declare it within 3(three) days.

1. MACHINE DESCRIPTION
This machine has been built according to the required safety and hygienic
norms of the MACHINES DIRECTIVE 89/68 CEE (and following modifications 91/368/
CEE and 93/68/CEE) and according to the EN REGULATIONS (European Norms)
referred to the Automatic Spiral Mixer with Fixed Bowl for the production of bread,
pastry and other oven products.
All the machine data are written on an aluminium plate applied on the backside of
the Spiral Mixer, as described in Fig.1
Restriction: There are no particular usage restrictions for the spiral mixer except
the dough flour-water hardness ratio which should be less than 50%.

2. SAFETY DEVICES
During the design and construction of this machine the manufacturer has adopted all
the criteria and necessary devices imposed by the Machinery Safety Directive
89/392/EEC, Low Voltage Directive 73/23/EEC and Electromagnetic Compatibility
Directive 89/336/EEC including all subsequent amendments.
The careful risk analysis carried out by the manufacturer has eliminated most of the
risks (predicted or reasonably predictable) linked to the machine operation.
Danger: Do not wear loose clothes, ties, chains, or watches that could get caught
by the moving parts of the machine.
NOTE: PANEMOR will not be responsible for any damage or injury to persons,
animals or things caused by the misuse of the machine due to the inattention to
safety rules and neglect of the suggestions written and shown in this manual.
In case the protective cover is lifted, the machine stops working. In order to restart
the machine press “START” button.
All transmitting elements are placed and closed inside the main body of the mixer
and they can only be reached if the security elements are deactivated.
3. TRANSPORTS AND LIFTING
3.1 Instructions
The weight of Spiral Mixer depends on its model. You can see the weights of each
model from Table-1.
Carriage of the spiral mixer should be done on pallets and the machine should be
packaged with nylons and papers for delivery. (FIG 2-4) The machine can also be
lifted by means of ropes. (FIG. 3-5)
On request the spiral mixer can be packed with a box pallet refer to Figure-4.
ATTENTION: Check the capacity, which will have to be adequate to the mixer
weight indicated related table.

3.2 Installation
Place the Spiral Mixer in a suitable and safe place for its use. The room will have to
be sufficiently ventilated and lighted.
Respect the minimum distance from walls to have the necessary space for the
working, cleaning and maintenance operations. (FIG. 6)
This distance will allow the machine to operate in safe conditions, avoiding any
possible scrapings between the machine and the wall.After placing the machine in
site; fix it with the fixing pedal on the wheels and fixing feet.

Power supply should be 3x380 VAC –220 VAC 50 Hz. (3x420 VAC – 240 VAC 60 Hz.
on request). The energy connection must be done in a proper phase sequence. In
the case of wrong rotation change the two phases A –B that are located on the
switch plug.(FIG. 7) This process should not be done with the switch plug located on
the oven.
The electrical input is provided by a unique electrical link cable located at the back of
the machine.
Check that the plate tension corresponds to the mains voltage, that the plate power
is the same of interior to that of the mains.
When necessary, in order to cut the connection between the machine and the feeder
mains, you may use the manual cutoff socket device located on the machine. (When
cleaning)

4.2 Setting Up
The machine has only one connection to the mains electricity supply as, three phase
380 VAC 50 Hz. (3x420 VAC – 240 VAC 60 Hz. on request).
DANGER: Make sure that the value of your mains electricity supply complies with
the power specifications of the machine.
Make sure the machine is adequately earthed before making any other connection to
the mains power supply.
In case of out service empty the dough from the bowl. Keep the bowl grid lid closed
and leave the machine clean.
CAUTION: All check up and maintenance operations should only be carried out
when the machine is switched off and disconnected from the electric power supplies.
After you finish controlling the machine, protective lids that had been disassembled
should be detached and fixed in their original positions.
Every day:
- Safety systems must be checked before daily maintenance.
- This machine, especially all dough touching surfaces, should be cleaned
every day.
- Don’t use steel scrapers and poisonous chemicals or soap for cleaning
purposes
- Do not use toxic solutions for cleaning.
Every week:
- Outer sides should be cleaned by a wet cloth.
DANGER: Cleaning operations should only be carried out when the machine is
switched off and disconnected from the electric power supplies.
BEWARE:
-Don’t use jets of water to clean the control panels and the electric control box.
-Don’t use solvents, which could damage the paint and synthetic materials.
-Avoid especially petrol derivated materials such as nitro-per chlorate, thinners and
tri-chloromethane.
Specialized and trained staff, who have a command of setting up and operating the
machines and who follows the instructions given in this manual, must carry out
extraordinary maintenance.

7. ADJUSTMENTS
The following should be done if the spiral arm is noticed to be slowing down.
Step 2: Loosen the four screws (See Figure 8-A) of the motor support without
unscrewing them completely, then unscrew the nut (Figure 8-B)
Step 3: Set the correct belt tension with the screw (Figure 8-C) and fasten the nut
(Figure 8-C)
