Title: Preparing Skinless Longganiza
Ingredients:
¾ kg ground pork (lean)
¼ kg ground pork (fat)
tsp Iodized Salt
½ cup brown sugar
½ cup pineapple juice
2 tbsp chopped garlic
1 tbsp ground black pepper
2 tsp Mallorca
2 tsp rufino patis
1 tsp MSG
1 tsp pimiento
½ tsp accord powder
½ tsp prague powder
Steps/Procedures
1. Prepare the ingredients and curing mixture. And mix.
2. Prepare all the seasonings
3. Combine seasoning ingredients and add to the cured meat. Mix all
until tacky
4. Chill for an hour
5. Wrap on plastic wrap (5x5) or paperlyne according to the desired
size.
6. Allow to cure in the refrigerator for 3 days before transferring to the
freezer
