¼ T Salt
¼ T Wine
1/8 T Accord dissolved in 1/6 cup of water
(¼ of 1/8 t) = 1/32 T prague powder
(¼ of1/8 t) = 1/32 T Vetsin
¼ T Black Pepper
1 pc plastic 5x8x.02
Label
PROCEDURES
1. Prepare and wash tools, utensils, and equipment.
2. Wash meat.
3. Slice beef thinly.
4. Measure all ingredients.
5. Combine all ingredients and mix cure for
30 minutes – 1 hour.
6. Place beef in plastic cellophane (5x8x.02).
7. Seal and label.
8. Refrigerate.
