FOREWORD
With gratitude, we have completed the preparation of the "Indonesian language
practical exam report" on "procedure text", although there are not a few obstacles
and difficulties that the author faces, there is no power and effort except with the help
of Almighty God.

The preparation of this report aims to fulfill one of the tasks of the Indonesian
language subject. this report still has many shortcomings and is not said to be
perfect because of our limited insight. Therefore, we expect constructive criticism
and suggestions so that in making reports in the future it can be even better.

Thank you to those who have helped complete this report. Hopefully this
practical exam report can provide benefits and add inspiration to readers.

I. APPETIZER
Jukut urap is a type of Balinese anointing, similar in
appearance to Javanese vegetable anointing. The contents of
jukut are usually vegetables in the form of long beans, bean
sprouts, spinach, and carrots then seasoned.

Jukut Urap

Ingredients:
- 150 g spinach, plucked
- 100 g long beans, cut into 2 cm pieces
- 100 g cabbage, roughly sliced
- 100 g bean sprouts, steeped in hot water, drained
- 150 ml thick coconut milk from fresh coconut milk
- 2 limes, extract juice
Topping:
- 1 large red chili, seeds removed, thinly sliced.
- 2 tbsp fried shallots
Seasoning:
- 4 tbsp fried shallots
- 3 tbsp fried garlic, coarsely crushed
- ½ tsp cooked shrimp paste, crushed
- 4 red chili peppers, finely sliced
- 5 lime leaves, de-boned, finely sliced
- 5 cm galangal, grilled, grind finely
- 2 tsp salt
- 1 tsp palm sugar, finely combed
- 3 tbsp hot coconut oil
How to make:
a. Bring enough water to a boil in a saucepan. Add a pinch of salt, boil each
vegetable separately until soft.
b. Especially for spinach and long beans, after being removed from the pot
immediately soak in ice water until cold then drain.
c. Mix all the vegetables in a container.
d. Seasoning: stir all seasoning ingredients until dissolved and blended.
e. Add coconut milk and lime juice, mix well.
f. Stir vegetables and seasonings until well mixed.
g. Add red chili and fried shallots, mix well.
h. Serve immediately.

II. MAIN COURSE

Ayam Betutu is a traditional


Balinese dish made from whole
chicken or duck stuffed with
spices, then roasted in a husk fire.
Ayam betutu is a type of side dish made from chicken meat that has been
cleaned, then spread Balinese spices known as "base genep" over the entire
surface of the chicken and partly inserted into the abdominal cavity. The
seasoned chicken is then boiled or grilled to produce a distinctive aroma. The
aroma is caused by the heating, which causes the water and fat in the meat to
evaporate. The more steam produced, the stronger and tastier the aroma.

Ingredients:
- 700 g chicken (1 whole bird)
- 2 tbsp lime juice
- 1 tsp salt
- 2 tbsp oil, for sautéing
- 2 lemongrass stalks, thinly sliced
- 2 tsp chicken stock
- 200 g cassava leaves, boiled
- 4 orange leaves
- banana leaves, for wrapping
Ground Spices:
- 8 shallots
- 6 cloves of garlic
- ½ coriander granules
- 12 curly red chilies
- 2 cm turmeric, roasted
- 2 cm ginger, grated
- 2 cm galangal, grated
- 1 tsp oil
- 1 tsp salt
- 1 tbsp brown sugar
How to make:
a. Marinate whole chicken with salt and lime evenly. Let stand until absorbed
for about 15 min. Set aside.
b. Heat oil, saute spices and lemongrass until fragrant. Add chicken broth, stir.
Lift.
c. Take half of the spices, stir together with cassava leaves and lime leaves.
Put it into the cavity of the chicken stomach.
d. Marinate the rest of the spices evenly over the entire surface of the
chicken. Wrap with banana leaves. Steam for 45 minutes. Remove.
e. Grill on a grill pan with banana leaves until browned. Halve the chicken
lengthwise.
f. Serve.

III. DESSERT

Pai susu or pastei susu is a


traditional Indonesian dessert
made from pastry filled with
egg custard and condensed
milk. The pastry is very flat with the filling consisting of only one very thin layer
of custard.

Pai Susu

Skin Ingredients:
- 200 g wheat flour
- 25 g milk powder
- 100 g margarine/butter/mix both
- 1 egg yolk
- 1 tbsp ice water
Filling Ingredients:
- 100 ml SKM
- 100 ml plain uht milk
- 2 egg yolks
- 1 tbsp cornstarch
- vanilla extract to taste
How to make:
a. To make the filling. Add cornstarch and a little water, stir to avoid rolling,
then add eggs and SKM and pour the remaining water. Put in the refrigerator
then make the skin.
b. How to make the pie crust:
c. Mix margarine, egg, powdered sugar, mix well. Then add flour.
d. Take some of the dough and place it while pressed into the pie mold (thick
according to your wishes, the thicker I think it's less delicious) do it until the
dough runs out.
e. Prick the surface with a fork so that it does not bulge when in the oven.
Then pour the filling ingredients to taste (using a spoon so as not to splatter).
f. Oven for approximately 20-30 minutes with a temperature of 130-140 ° C or
according to each oven
g. Serve immediately.

DIALOG TEXT

Waiter: "To wait for the main dish, here is our flagship Jakut urap"
Tourist: "wow... This looks interesting, what is this made of?"
Chef 1: "For that, let me explain"
Chef 1: "Jukut urap is made from bean sprouts, cabbage, spinach, long beans, chilies, fried
onions and coconut milk. The taste remains fresh and delicious."

Chef 1: "The way to make it is, first, boil all the vegetables until soft separately.

For spinach and long beans, after boiling put them in cold water

Add the shrimp paste, fried onions and cayenne pepper to the coconut milk solution then stir
well, then add the vegetables.

You can eat it with whatever toppings you like"

(tourist eats the dish)

Tourist: "This is so delicious! This makes me impatient for the main dish!"

Guide: "This is the main dish, chicken betutu!"
Guide: "Betutu Chicken is a typical culinary dish from Gilimanuk, in the form of chicken
cooked with spicy spices for a long time. This typical food is one that you really shouldn't
miss on a holiday to Bali, especially for those who like spicy food."

Tourist: "This looks really delicious, I can't wait to try it!"

(Tourists eat the dish)

Tourist: "Wow, this chicken is very soft, how can you make it so soft?"

Chef 2: "Let me explain, this is processed whole chicken meat which contains various
Balinese herbs and spices, such as a mixture of lime leaves, bay leaves, candlenuts, turmeric,
ginger, lemongrass and other spices.
After that, the processed meat is roasted using a husk fire so that the spices penetrate and
give it a distinctive taste."

Tourist: "This is so delicious, I'm almost full eating all of this"


Tourist: "I hope the dessert is as I expected!"

Waiter: "This is our restaurant's flagship milk pie, a soft pie that makes you addicted to every
bite."

Tourist: "wow, what an interesting look! I can't wait to try it"

Guide: "So this is milk pie, a typical Balinese snack which has another name, Londo Egg
Tart. This snack has a sweet and savory taste typical of milk with a crispy cake edge."

Tourist: "This is very appetizing, and it's really soft!

Tourist: "What ingredients do you use to make it this delicious?"

Chef 3: "I've been waiting for that question. So, the ingredients for making pie are wheat
flour, eggs, margarine, powdered sugar, UHT milk, sweetened thick creamer and corn flour.

The next step is: make the pie crust by mixing the flour, powdered sugar, margarine and eggs
until smooth.

Next, make the pie filling by whisking the eggs, milk and sweetened thick creamer.

Then, cool the dough, then pour the filling into the pie crust and bake in the oven until
cooked and your milk pie is ready."

(Tourists finish eating all the dishes)

Tourist: "I am very satisfied here, the food is delicious and the service is good, next time I
will definitely bring my friends here"
