Beef pot roast is a classic comfort food dish that's hearty and flavorful. Here's a simple recipe to make
beef pot roast at home:
Ingredients:
1 onion, chopped
2 bay leaves
Instructions:
Season the beef chuck roast generously with salt and pepper on all sides.
Heat the vegetable oil or olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
Once the oil is hot, add the beef chuck roast to the pot and sear it on all sides until nicely browned,
about 3-4 minutes per side. Remove the beef from the pot and set it aside.
3. Sauté the Aromatics:
In the same pot, add the chopped onion and cook for 2-3 minutes until softened.
Add the minced garlic and cook for another 1-2 minutes until fragrant.
Pour in the beef broth and red wine (if using), scraping the bottom of the pot with a wooden spoon to
loosen any browned bits.
Stir in the tomato paste and Worcestershire sauce until well combined.
Add the carrots, celery, fresh thyme, fresh rosemary, and bay leaves to the pot.
Cover the pot with a lid and transfer it to the preheated oven.
Let the beef roast in the oven for about 2.5 to 3 hours, or until the meat is fork-tender.
7. Add Potatoes:
Once the beef is tender, carefully remove the pot from the oven.
Add the peeled and chopped potatoes to the pot, nestling them around the beef.
8. Finish Cooking:
Return the pot to the oven and continue cooking, uncovered, for an additional 30-45 minutes, or until
the potatoes are tender and the beef is fully cooked.
If the sauce is too thin, you can remove the beef and vegetables from the pot and simmer the sauce on
the stovetop until it thickens slightly.
9. Serve:
Slice the beef against the grain and serve it with the vegetables and sauce.
