ABSTRACT

Coffee is a comfort already but it different when it has a home and that home is

called a Coffee Shop. This paper contains everything about the Coffee Shop business

that will soon to rise name “CoffeeMudTea” It is a coffee shop with variety of comfort to

offer. Various products to be offered also from the name itself the Coffee and Tea of

course a coffee is much better with a pair, Pastries are also available there are some

pastries that coffee infused and some are not. CoffeeMudTea’s goal is to let the coffee

be popular to the people with the knowledge of its benefits, one of the goal of the coffee

shop is to provide comfort to customers who are having a hard time in their works.

Since CoffeeMudTea is a home we have the “MagTeanamad Area” to let our valued

customer feel more relaxed it allow the guest to escape a little from stress, guest can

sleep because home is nothing without a place to nap. CoffeeMudTea is using the

Quality Coffee for the products, it is unique because this coffee grown in a red mud soil

where the word MUD came from in its business name “CoffeeMudTea”. It’s location is at

Corales Street Barangay 9 Cagayan de Oro City in order for the customers to access

easily. The coffee shop entails also safety of establishments, staffs and especially the

customers. Inside this paper contains the safety measure to be used from the

equipment up to uniform and safe work protocols of the staff. By these things

CoffeeMudTea is looking forward to be one of the premier coffee shop in the city.

CHAPTER 1

CONCEPT PLANNING

This chapter contains the Logo and Brand, the vision of business, the missions

itself, Objectives that the business has, Target Market also since it has a big role in

every business, the Site Location and the Menu Planning that would discuss the details

of the menu. This chapter gives and birds’ view of the business.

Concept:

CoffeeMudTea is a shop that offers Coffee, Milk Tea’s and Pastries. We want to

provide the comfort that our customer needs. It is not just a coffee shop but it is also a

comfort zone area where the customers are allowed to work silently longer as they want

to or if they tired. Also CoffeeMudTea has its own uniqueness where customers could

sleep inside the shop as long as they are staying in our “MagtinaMUD Area” where they

escape for a while from works. Customers will be provided a pillow and they can even

request for a blanket if they want to.

Design and Lay Out:

The Coffeemudtea Will be using the Color combination of Ecru color, Matte Black

and Ivory White These colors was chosen because it will help the owner to meet the

main goal for the customers to give the customers a Perfect comfort aside from

providing them Quality Brewed Coffee, good taste of milktea and A comfort Area the

Mugteanamud area.

Logo and Brand:

 A cup of coffee with Mud Splash design on side, entails our concept and a coffee

that we are using which is a Red Mud Tea

 The Coffee Beans on the side, represent our manual brewing.

 On the other side there is a Tea Leaf, which represents the use of our Milk Tea.

 On top of the coffee cup is the pastry and frappe

 PASTRY; it is best paired with our coffee

 MILKTEA CUP; It talks about one of one of the roduct is will be soldl the Milk tea.

 The Name

“CoffeeMudTea is derived from the products that will be sold which is the Coffee and

Milk Tea’s.The word “MUD” is came from the coffee that the shop will be using which is

the “RED MUD COFFEE”. A coffee that grows in a red soil in the Kavre District. This

type of coffee was used by Aashish Adhikari a coffee shop owner, that’s why our Coffee

Shop was named “CoffeeMudTea

Vision:

Provide community support through Customer involvement.

Mission:

To position ourselves as one of the premier coffee shop in the City and to grow

our brand outside the City.

Objective:

To allow people finish their with a cup of coffee to help them boost their energy,

Cleans their body since coffee could help your body to get cleaned. To introduced

quality freshly brewed coffee. To educate people with benefits of the coffee and milk

tea.

Target Market:

The target market of the coffee shop includes drip coffee drinkers, coffee shop

lovers, and specialty coffee drinkers for the drip coffee drinkers the target market maybe

the students, business workers and teachers on their way to work or class, who want a

cheap cup of coffee. For coffee shop lovers these are the people who spend time at

shops and cafes where specialty drinks and regular cups of coffee are available along

with an inviting atmosphere rather than coming into grab a cup. For specialty coffee

drinks espresso, cappuccino, lattes etc. are just start, coffee drinkers or the target

market of these consist of those who love specific ingredients in their coffee based

beverage , and are willing to pay a premium to get what they want.

Location:

The coffeeshop will be located at Corales street Barangay 9 Cagayan De Oro

City where the customers is can access immediately because it is near the High Way

and Schools and Offices Is near.

Menu:

CoffeeMudtea Menu has variety of drinks listed it has cold and Hot, It has a black

background to highlight the colorful list of the drinks the colors of each fonts describes

the type of drink or coffee it is for hot coffee the color is red, for the cold the color is

blue, the milk tea’s font is green, the Manual brewing coffee is white and the pastry is

yellow when look t the menu it has designs of the pictures of the different coffees,

pastries, and milktea to be sold these designs will boost the appetite of the customers

upon looking at the menu. The designs are relevant to the concept since it using the

matte black and trendy type of milk tea.

CHAPTER II

INTERIOR AND EXTERIOR DESIGN

In this chapter the inside and outside beauty of the Coffee Shop will be more

detailed. It provides an image into the reader on what does the coffee shop will be look

like where it consist of the Sight, smell and sound, Temperature, tempo and landscape,

Lighting, Tables and chairs, Table Setting, Curtain and shape, Plants and overview, and

lastly the Wall ceilings, floors and colors.

Sight, smell and sound

SIGHT:

Sight perception also matters in having a business like a coffee shop because it

is where the concept of the coffee shop lies that is why it important to give

attention to this. Our coffee shop will be using the combination of nude color and

matte black with such reasons of first is that since our business is a coffee shop

and as what we have observe that the ideal color theme of a coffee shop is quite

closer to these colors, Second reason is that we used this combination because

it makes the atmosphere warm which suits to our business type, our coffee shop

is a small coffee shop with a small space but we will be putting everything in

order and make sure that it will be suiting to the eyes, The uniform of the staffs or

the barista’s has an impact to sight of the customer in which it should be well

pressed, colors should be uniform we decided that the color of the uniform will be

black Sleeved polo with gray colar and a black slacks with the gray apron and a

nametag on the side chest, For the menu we used the nude color and a design

on the side of our products to connect to our concept.

SMELL:

In this aspect we all know that the ideal smell of a coffee shop should be a smell

of A freshly brewed coffee, Upon entering the coffee shop the customer will smell

directly the aroma of a coffee so that it will boost their appetite upon ordering a

cup of a coffee or any of our products which are the pastries and milk tea. The

smell of a coffee signifies the relaxing atmosphere in our coffee shop since one

of our main goal is to provide comfort to the customers. We are avoiding to have

in-relevant smell in our coffee shop like a smell of viand which not relevant to our

business.

SOUND:

LEVEL OF CONVERSATION:

In a coffee shop like us which is a working area also the level of the

conversation must be very minimal where no words that you will heard uttered by the

customers as possible, since they are into their own businesses which is to study,

prepare works and even relaxing they don’t mind already to have a conversation where

they will talk loudly like in a bar.

SERVING STAFFF:

Serving staffs must be well informed and train how to interact with the

customers in a way that their voices must not be disturbance to the other customer,

especially they are not allowed to talk loudly to each co-barista even if they talk about

the business of the coffee shop. Educating your staff and teaching them good values

takes a big impact to the customer and to your business.

KITCHEN/BAR SOUNDS:

Inside the bar we cannot avoid to hear the sound of a coffee grinder, the

sound of a coffee machine upon extracting a coffee these sounds are just natural in a

coffee shop although these sounds are cannot be avoided but still it boost the appetite

of the going because these sounds produces or contributes a pleasing aroma of a newly

grind coffee beans and a freshly brewed coffee. The only thing that we are avoiding id

the sound of glass wares inside the bar that is why it is also important orient your barista

to work in appropriately.

MUSIC:

Various studies have found that playing in-house music set to a carefully

considered tempo, volume, genre, and valence can influence behavior and decision-

making. One study found that music at a slower tempo encourages customers to linger

and spend more money. Conversely, fast-paced music led to a quicker exit. According

to a study from Texas Tech, customers want the genre of music to “fit” the context. By

playing music that complements other elements of your establishment, customers will

value your efforts and be willing to spend more money. In our coffee shop we will be

playing the songs of Justine timberlake, paper kites, Alicia Keys, Jamie Lidell, Jordan

Rakei, Beyoncé, Leon Bridges that Groove to slow to medium tempo sounds by

contemporary soul and an indie-tunes like. We chose the musics of these artist because

boost up the vibe of our customers upon working and relaxing their music like marathon,

strawberry bubble gum in common the fire we make, halo, crazy in love etc. are in the

right tempo that suits our customer’s mood.

Temperature, tempo and landscape:

TEMPERATURE:

The temperature of a room must be considered also if it talks about coffees, we

decided to have the temperature of 17-25 Celsius in our coffee shop since we brewed

coffee, offers milk tea and pastries our coffee shop does not only consider the desired

temperature upon sipping a hot coffee but also we give importance to other products

which are the milk teas and pastries we chose this temperature between 17-25 Celsius

that is best paired with hot or any cold drinks.

TEMPO:

In our coffee shop barista’s must work fast where they are only allowed 5-10

minutes upon preparing the order of the customer to be served, it must be fast phase

when it comes to serving customers but for the customers since one of our uniqueness

is that the customer can stay longer as they want as long as they order, just like for

example availing our Free Wifi which is one of the reason why they stay longer they can

avail our free wifi for every 2 hours if they purchase with the minimum order of Php100

They will be given a slip of paper which the password for the WiFi is written, Since our

Wifi will change automatically its password for every 2 hours when consumed.

LANDSCAPE:

In our coffee shop we have a small area which is intended for those customer

who would like to nap and take a rest which is called “MagTeanaMud” area and

to eliminate stress we will be putting our mini landscape inside MagTeanaMud

area since this area is for relaxing putting some plants inside could help them to

ease stress, According to Jenny Weller (2018) plants can help you relax simply

because of their color, greenery is good for the mind, body and soul it decreases

blood pressure and lowering stress levels. Our customers don’t need to go

somewhere to forget stress because we brought the green inside that can work

wonders for the wellbeing and mental health.

Exterior Design:

Exterior design of a coffee shop plays a big role in a business establishment

because there were customers who are not familiar with your shop and they will based

automatically on its exterior design or its Curb Appeal, The exterior design of our coffee

shop will be a glass wall with concrete cement on each side painted with matte black,

And a design of wall lumps with a dim color. Outside our coffee shop is where you can

see our Logo was being hanged and lighted with brilliant color. The type of glass we will

be using is View (Clear) in order for the customers see clearly what is inside and out.

Exterior and Interior Lighting:

In the shop we are planning to have Accent Lighting inside the coffee shop in

which it adds drama in the coffee space this kind of light is to highlight the

ambiance of our coffee shop such as piece of art from walls, the design, the

setup, the combination of colors etc. For the exterior lighting It will be highlighted

with

Entrance way:

In the entrance way, You will be welcomed by a glass door with a pile of block on

the side of the entrance way which is black, and a lump hanged which is lighted

with accent lighting, The reason why we will be using a glass door in order for the

customers to see what is inside the coffee shop and when they are inside they

will also appreciate the beauty outside the shop while sipping a coffee because

most of us would love to sip a coffee while watching beauty of the city.

Colors:

Color is one of the strongest non-verbal forms of communications that designers

can use. Color can instantly evoke an emotion and help people understand the brand is

being represented. In our business we are using the color combination of nude color

and matte black, According to Jon (2014) Black is Distinctive, serious, and authority.

Black is sophisticated and classic, just like a clean-cut suit. That is why we think that

using black color could best suit on our coffee shop where our customers are into

works. The next color is Ecru , Ecru color has more earthly, Masculine feel and it mostly

used as highlighting color or an accent that is more relaxing.white brown color is saying

it is a warm, neutral color that you can use as a background that conveys warmth and

wholesomeness while white color is White represents purity and innocence and creates

a minimalist aesthetic. It can be very simple, clean and modern. For that mixture of color

we decided to use the nude color that would really take a role in ambiance of our coffee

shop.

Tables and chairs:

For our tables and chairs we are going to use wooden chairs and tables that are

made of mahogany tree, because mahogany is hardwood and known for its good

quality though its price range cost a little bit high still it is worth it. Mahogany is ideal to

be use in tables and chairs it has various colors but we are going to use the color of

medium brown that can complement to our color combination in our coffee shop.

For the standard height of our tables and chairs 27 inches from the ground height

Seat height 16’’

About 80% of all people suffer from back pain at Least, the main reason why we chose

this standard height of our chairs is that we consider the health of our customers where

due to incorrect posture while sitting while working it is important to consider your

possible customers upon choosing your things in the business.

Table settings:

The table setting in our coffee shop will be simple, a center piece in each of the

table a jade plant, Condiments are just available at the side of the counter if they

request it will only be served, a tissue and when the order is served the glass wares will

be added and saucer, and a teaspoon.

Curtains, Windows and shades:

We decide not to put a curtain in our coffee shop to emphasized our painted wall

that gives warmth and security, brown color is the earth wood, stone,

wholesomeness this color stimulates the appetite root sometimes color brown

considered dull it also represents steadfastness, simplicity, friendliness and

dependability color brown affects the mind and body by creating feelings of

wholesomeness and stability even peace. It provides feelings of organization

history and connection as hell as feelings of relaxation and warmth.

The matte black is the stereotypical color that people who are bravely or

antisocial wear and it evoke power majesty and calm. Matte black or has some

powerful effects, providing comfort while protecting its emotions and feelings, and

hiding vulnerabilities, insecurities and lack of Self Confidence.

Plants and Flowers:

The flowers that we will be using are the Jade Flower, Mass plant and baby

rubber plant.

Jade plant: That commonly bloom small pink, or white flowers that will perfectly fit

on the center of the table it also add a greenery color of the area. This will be put

on each table with chairs.

Moss plant: is known for purifying the air by taking in pollutants and converting

them into oxygen. This plant will be put on the counter side of the area which

produced a splash of oxygen.

Baby rubber Plant: high oxygen content & skills bacteria & word spore that land

on the leaves- this plant helps making it good for those who suffer from asthma.

This also add to light & airy theme color of establishment.

Walls, ceiling and floor:

WALLS: Our wall is painted with the combination of ecru color and white, so that

our customers will not be disturb by any crowded painting in the wall, we will also hang

few fmaes with some art works and minimal wall design. It will help the customers feel

relaxed and comfortable. It also give customers a sense of support and stability, it can

even convince a guest to come back as repeat customers while color give relaxed

leisurely feel. White can also make the place clean and organize it does not look larger

but the area look sterile.

CEILING: Our ceiling will be in light color we colored it with white a light color

that evoke a leisurely and relaxing atmosphere, which makes theme an excellent choice

for our establishment. Ivory and white is the exact color of our ceiling.

FLOOR: The floor is purely made of hard cement which has a color of ash gray

that will meet the color concept the muddy theme. The color of the chairs, table and the

walls will compliment into the theme in order for the customer to clearly see our

concept.

of the business the Electricity Allocation and Water Supply. It helps to picture out the

possible expense that the business will allocate.

Work Guidelines and Safety Procedures

In this chapter the Safety Work Place consist of the employees’ safety and

sanitation, Fire safety, Training, Uniforms, Tools and Equipment. These would present

the different information regarding the safety of establishment, the staffs especially the

customers. The primary concern of establishment is safety of everyone that is why this

chapter is one of the important things to consider in the business.

EMPLOYEES SAFETY AND SANITATION

We can’t predict danger, we can’t tell what will happen inside the working area correct

positioning of the equipment also matters it contributes to the safety also the (PPE)

Personal Protective Equipment is a must it serves as a protection of the barista and the

person who will bake the pastries, it has a significant important that an establishment

must have. There are several thing that needs to be considered in order to avoid such

danger these includes the following :

 Slips and falls, on a wet floor, icy sidewalk , or climbing ladders or steps.

 Cuts from knives, electric slicers, and other sharp kitchen tools.

 Burns from hot oil, hot water, the entire cooking process, and

dishwashing.

 Back injuries, from moving and handling heavy equipment and bulk

supplies

 Bumps and bruises, from dropping things, bumping into things, mild-aisle

collisions on a busy evening, etc.

 In order to prevent those things the proponents decided to use safety centered

equipment and materials just like for example in a slippery area like kitchen must

have a non-slipped mats, slip prevention is also beneficial for more than just the

back of the house. We also think that drainage mat also could help us to prevent

hazards, drainage mats are made with special tread on a slip-resistant material

like rubber or vinyl that will provide our workers with more traction than the

typical kitchen floor.

 CoffeeMudTea will be using also neoprene gloves, it give great protection

against chemicals, acids, and other harsh substances, it maintains flexibility over

wide temperature range, it can be latex- free to help reduce potential allergic

reactions.

 Injuries also happened inside the working area just like for example receiving

new deliveries for your stocks definitely you will be carrying those boxes, sacks

etc. We decided to have a hand trucks so that whenever there are new stocks

arrived, we simply used hand track to lessen the hassle for the workers.

 The equipment of our establishment like refrigerator has a built in small wheels

so that it will be easy to transfer and whenever we will have a general cleaning it

will be easy to move and clean the bottom part of the equipment.

 Cabinets must be well hanged, the things displayed on the cabinet must be easy

to reach and accessible, correct height for the hanging cabinets is a must to

avoid hazard.

Fire Extinguishers

 In a specific establishment safety is a must, We cannot predict any danger that

might come that is why we all need equipment and tools that will help us with our

safety, Fire extinguishers are also one of these in our coffee shop we will be

using the Dry Chemical Fire Extinguisher, Dry Chemical fire extinguishers

extinguish the fire primarily by interrupting the chemical reaction of the fire

triangle.

Today's most widely used type of fire extinguisher is the multipurpose dry

chemical that is effective on Class A, B, and C fires. This agent also works by

creating a barrier between the oxygen element and the fuel element on Class A

fires.

Ordinary dry chemical is for Class B & C fires only. It is

important to use the correct extinguisher for the type of fuel!

Using the incorrect agent can allow the fire to re-ignite after

apparently being extinguished successfully

5-lb-capacity fire

Water Sprinklers:

Fire sprinklers are a part of a vital system that help protect your building against

fire. They are a part of a complicated system and they can become even more

complicated because there are numerous different types of systems. In our Coffee Shop

we will be using the Wet pipe systems it is definitely the most commonly used fire

sprinkler systems. Why? Because it is very reliable and, at the same time, simple.

Basically it works this way: in the event of a fire, water is provided to the piping via the

sprinklers heads by an automatic water supply.

TRAININGS

 Inside the walking area the staffs are well oriented so with their safety, that is

why we will be training the staffs with the standard that a barista skills should

have. Our barista should undergo a barista training and must have a Barista NCII

through this certification we are confident that the barista that we will be hiring

are competent enough this training covers everything regarding the skills of a

barista. From the sanitation up to the how they manage the coffee shop and the

consumers.

 The coffee shop will also engage the staffs into seminars regarding the safety

and sanitation inside the shop and how they handle the orders that they will be

preparing in order to avoid problems, it will also add on to their prior knowledge

from their NCII Barista skills training.

Our pastry uniform includes the following:

White double-breasted jacket – to easily change the uniform, easy open.

The design of the uniform jacket is long so that your arms are being protected

to the burns, spills, and scalding steam.

Chef toque – the design of our chef toque or chef hat is tall and plain and

It also serve to keep your hair out of the food and sweat off your face.

Chef neckerchief – absorbs sweat from your neck and it also adds a

“professional” look to any chef uniform.

Chef pants – the design of our pants is baggy so that the chef can freely move around

And feel comfortable when worn. Black is the color of our pants so that the dirt is

not visible.

Chef shoes – anti-slip shoes or plastic shoes to avoid slips and other kitchen mishaps.

Chef socks – we required black socks to be paired to the plastic shoes, to avid your

feet
