1. Cook the noodles following the package instructions.
2. Meanwhile, in a large skillet over medium heat, heat the olive oil. 3. Add the chopped onion and garlic and cook until golden and fragrant. 4. Add the crushed tomato or tomato sauce to the pan and mix well. 5. Add sugar, salt, pepper and any spices you want. Mix everything together and let the sauce simmer for a few minutes to let the flavors blend. 6. When the noodles are ready, drain them and add them to the pan with the red sauce. 7. Toss the noodles with the sauce to make sure they are evenly coated. 8. Serve the red noodles hot and, if desired, sprinkle grated cheese on top.
