Gooseberry (Amla) Winemaking Procedure


Introduction-

Wines are alcoholic beverages typically made from grapes of various varieties which further
produce wines of different flavors and styles. Though, wines can also be produced using any
fruit containing sugar, to aow yeast to act upon it. Wine is essentially known to be made by the
process of fermentation which is the act of converting sugar into alcohol by the addition of yeast.

The objective of the following report is based on the procedure of winemaking using a fruit
known as ‘Gooseberry’. It was also carried out in order to familiarize ourselves with the
industrial process of winemaking. To understand fruit based wines as a whole it is essential to
know that they carry around 8-11% alcohol and 2-3% sugar content.

Thus, during our practical we endeavored to make a wine using traditional methods which would
not only produce a fine wine but also bring out the medicinal properties of gooseberries which
include remedies to Diabetes, Cancer, High Blood Pressure etc. It is also known that these
berries tend to produce wines that are sweeter in nature along with a slight sense of tartness.

Ingredients Quantity
Gooseberries (Amla) 1kg
Cloves 15 pods
Cardamom 15 pods
Cinnamon Sticks 2 sticks
Ginger 2 inch
Sugar 1 kg
Yeast 2 Tbsp

Equipment Used-

1) Cutting Board
2) Knife
3) Large Container/ Jar 4) Ladle
5) Measuring Spoons 6) Water Jug
7) Cling Wrap

Procedure-
1. 1) Collect & wash Gooseberries thoroughly.
2. 2) Lay on a cutting board and slice them open to about halfway and add to a big
container or jar.
3. 3) Add an equal amount of sugar to the container.
4. 4) Add spices including Cloves, Cinnamon, Cardamom and Ginger.
5. 5) Add 1 Tsp yeast. Give the mixture a through mix.
6. 6) Cover and store in a cool, dark and dry place, away from sunlight for a

Observations-
Day 1- Clear. Thick in consistency because of dissolved sugar.

Day 2- No Change in visuals.


Day 3- Complete breakdown of sugar.
Day 4- Primary Fermentation begins.
Day 5- Slight changes in gooseberries as it lightly browns.
Day 6- Gooseberries start to break down slowly.
Day 7- Breakdown of berries continues.
Day 8- Fermentation continues.
Day 9- Slight tart aroma is produced.
Day 10- Absence of solid particles.
Day 11- Slightly cloudy in visuals.
Day 12- Liquid has turned darker in color due to high sugar content. Day 13- Texture seems to
be smoother in nature.
Day 14- Developed a strong sweet aroma along with a dark color.
