Advantage and Disadvantage of Dry Heat and Moist Heat Method of

Cooking
According to some researchers cooking was invented over 2.3 million years
ago. Cooking is the act of using heat to prepare food for consumption. The cooking
also known as Professionally as the culinary arts or Cookery. The art, science and
craft of using heat to make food more palatable, digestible, safe, and nutritious.
Dry heat and Moist heat are methods that used in cooking.
Dry heat and Moist heat methods of cooking has also an advantages and
disadvantages. Dry heat cooking are foods cooked either by direct heat, like on a
grill or roasting, or by indirect heat in a closed environment, like in an oven.
Grilling, Baking, Roasting, Frying, and Broiling are part of Dry heat method of
cooking. While, Moist heat cooking method used water, steam, or another liquid to
transfer heat to food for cooking. Moist heat particularly useful for softening tough
fibers, such as meat protein and many more. Blanching, Boiling, Poaching,
Steaming, Simmering, and Stewing are part of Moist heat method of cooking.
The Advantage of Dry Heat Method: Preserves nutrients, enhance flavor
through caramelization, no need for water or broth, simple equipment needed,
creates crispy texture, less damaging to glass & metal equipment compared to
moist heat method. Disadvantage of Dry Heat Method: requires constant attention,
limited moisture retention, can overcook easily, toughens some proteins, and May
dry out food. Frying and deep-frying, if not done correctly, can increase a meal’s
fat content considerably. Grilling, Broiling, and Roasting can all produce charred
surfaces containing carcinogenic substances in meats.
On the other hand, moist heat cooking used a liquid to cook food. Example of
moist heat cooking is braising that involves browning the food in oil and then
cooking it in a covered pot with small amount of liquid and cooked for long time.
This process renders the meat tender and flavorful resulting in a hearty and
comforting meal. While the disadvantage of moist heat method is that it can easily
overcook the food and it is not an ideal method for creating crispy texture/
browning the food’s surface.
Therefore, both Dry heat and Moist heat cooking methods have their
advantages and disadvantages. But, with understanding and applying the methods
correctly it will help you create delicious meals that everyone of us will love.
