Cinnamon Sugar Cookies

These flaky sugar cookies are almost dangerously fast to make.

Ingredients
½ cup granulated sugar, divided

½ (17.3-oz.) package frozen puff pastry, thawed (1 sheet)

¼ cup finely chopped pecans

¼ teaspoon ground cinnamon

1 large egg, beaten

Directions
Step 1
Preheat oven to 450°F.

Step 2
Sprinkle work surface with 2 tablespoons of the sugar. Unfold pastry sheet on sugar.

Step 3
Stir together pecans, cinnamon, and ¼ cup of the sugar in a small bowl.

Step 4
Brush pastry with egg, and sprinkle with pecan-sugar mixture. Roll sheet up in a tight log, pinching
seam to seal.

Step 5
Freeze roll until firm, about 15 minutes. Cut into ¼-inch-thick slices. Sprinkle slices with remaining 2
tablespoons sugar.

Step 6
Bake in preheated oven on a parchment paper-lined baking sheet until golden brown, about 9 minutes.
Turn slices over, and bake 5 more minutes. Cool completely on baking sheet, about 20 minutes.
