Copycat BJ's Parmesan Crusted Chicken

Here's a way to make your favorite BJ's meal taste even better for much less than
you would get at the restaurant! Tastes EXACTLY like the real thing!

INGREDIENTS
3 chicken breasts Sliced in half thickness-wise
1 cup flour
1 ½ cups freshly grated parmesan cheese Or the sprinkle kind from a can if
that's all you have!
2 cups panko bread crumbs
¼ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
3 eggs
¼ cup water
2 cups frying oil I use vegetable oil

Chardonnay Butter
6 tbsp salted butter
⅓ cup white wine (Chardonnay)
¼ tsp salt
1 tsp sugar
3 tbsp lemon juice
1 cup heavy cream
⅛ tsp white pepper
⅛ tsp nutmeg

Garnishes
¼-½ cup sun dried tomatoes Preferably the kind in a jar with olive oil
¼ cup shredded fresh parmesan cheese

INSTRUCTIONS
1. Cut the fat off of the chicken breasts and slice them in half thickness-wise.
2. In between sheets of saran wrap, use a meat cleaver to pound each chicken
breast to an even thickness.
3. Put flour in a large bowl or plate. Whisk together eggs and water in a large bowl.
Mix together panko bread crumbs, parmesan, salt, pepper, and garlic powder in
a large bowl or plate. Put the three bowls/plates side by side.
4. Heat the oil in a skillet on medium-high heat to about 350-400 F or until you
start to hear little bubbles.
5. Dip each chicken breast in the flour, egg mixture, then the bread crumb mixture,
ensuring the entire piece of chicken is coated then put it in the skillet to fry.
You'll most likely need to fry 2-3 chicken breasts at a time.
6. Fry the chicken for about 4-6 minutes on each side until deep golden and crispy.
7. Once both sides are fried, transfer the chicken to a paper towel-lined plate to
soak up the extra oil.

Chardonnay Butter
1. Melt butter in a sauce pan.
2. Add the wine and cook on medium for about 2-3 minutes.
3. Add salt, sugar, lemon juice, white pepper, and nutmeg. Stir.
4. Turn off the burner and add the heavy cream. Stir.

Serve
1. Take a crispy chicken breast, top with lots of Chardonnay butter, parmesan
cheese, and sun dried tomatoes, and serve alongside some steamed broccoli and
creamy mashed potatoes.

NOTES
This Chardonnay butter sauce is one of the most amazing sauces I've ever come
across. Feel free to top anything with it or add it to any meal to take it over the top!
