As the loading time will be the same on all different wing blade types, the capacity
does not grow constantly.
Spiral blade
• Push size range from
1mm up to 40-45mm

Cheese sticks
• Cheese sticks can be

• If cut very thin, it is a very

Cheese flakes
• Great application for
parmesan flakes

• Usually a bladed disc is


used for flakes

• Doesn‘t work well with soft


cheese → the harder the
cheese, the better the
results
Cocktail cubes
• High quality cubes of
cheese, snack cubes

• Wire grid + wire blade to


get best results

• Very little capacity due to


slow cutting process
Vegetables
• Basically all vegetables
can be cut by Holac
machines

• Some vegetables (carrots,


potatoes) are very tough.
Tough vegetables can‘t be
cut smaller than 10mm
cubes

• On very soft vegetables


(eg tomatoes), don‘t use
any prepressure as it will
destroy the vegetables
structure
Tripe
• Tripe can be cut fresh and
frozen

• Ice crystals in frozen tribe


wear out blades very fast

• Tripe needs to be properly


cleaned. It is possible to
find stone or other hard
materials in tripes. These
will destroy the cutting
edges of the blades
Processed meat
• Processed meat usually
comes in logs or calibers

• Thin blades give better


results as processed meat
is usually very soft
