Ice Cream base Recipe With Milk


1¾ cups heavy cream
1¼ cup whole milk
¾ cup sugar
⅛ teaspoon fine sea salt
1 tablespoon vanilla extract or 1 vanilla bean split in half lengthwise or

Method:-

Pour 1 cup of the cream into a saucepan and add the sugar, salt. Scrape the
seeds of the vanilla bean into the pot and then add the vanilla pod to the pot.
Warm the mixture over medium heat, just until the sugar dissolves. Remove
from the heat and add the remaining cream, milk, and vanilla extract (if using
extract). ( At this stage after cooling you can add it to ice cream churner, if you
are using one and make your soft serve, or freeze the soft serve and make
your icecream)

Keep cooking it, till you get a thick mixture of milk and cream, it will happen
around the time, when the quantity is just half.

Let it cool down and store it in an Airtight container in the freezer.

Now when you are making ice cream, take ¾ cup of chilled fruit puree and 1
cup of ice cream base. (keep the base outside and let it melt, but it should be
cold, the best way is take it out from the freezer and keep it in the fridge for
thawing)After 4-5 hours or overnight in the fridge, it will thaw and you can
make your ice cream.

Make sure the fruit puree is sweet, or add some sugar if needed
