What is the Alkaline Diet?
Some of the best and most trusted diets are those that have been proven to
not only aid in a person's quest to lose weight, but those that also benefit other
systems in the body. These diets result in weight loss as well as a transformation
in the overall health of the body. One such diet is known as the Alkaline Diet, a
unique regiment that focuses mainly on the acid and pH levels that are found in
the body. According to the Alkaline Diet, there are a wide variety of foods that
influence the pH and acid balances of fluids found in the body, such as blood or
urine. When the two categories - acidic and alkalizing - are in perfect balance in
the body, maximum health benefits ensue. This is the driving idea behind the
Alkaline Diet, and the reason why so many people have turned to the diet to aid
them in their endeavors for total body health.
In the early 1900s, doctors began to develop their theories regarding acidic
foods and their effects on the body. The leading medical theory on this matter is
that an increased consumption of acidic foods - such as meats, poultry, cheeses,
eggs, and many other foods - can contribute to heightened levels of acid ash in
the body. The higher the level of acid ash, the more likely for the bones in the
body to become weak, which may eventually lead to diseases such as
osteoporosis. In consuming these foods, the acid levels of the urine also increase,
which in many cases can lead to harmful maladies such as urinary tract
infections and kidney stones. The Alkaline Diet seeks to restore the balance
between acidic and alkalizing foods so that all of these negative consequences
can be avoided and so that people can achieve optimum health.
In pursuing the Alkaline Diet, dieters are encouraged to increase their
consumption of alkalizing foods; for vegetables, this includes broccoli,
cucumbers, lettuce, kale, and spinach, among others. Acceptable fruits include
apples, bananas, grapes, melons, peaches, and watermelon. In terms of protein,
the Alkaline Diet allows for the consumption of almonds, tofu, and chestnuts.
Meat should be avoided whenever possible, as again it contributes to heightened
level of acid ash. Though for Americans the Alkaline Diet seems to be a drastic
lifestyle change, the benefits inherent to the diet are exceptional and cannot be
ignored.

Benefits of the Alkaline Diet?
The popular Alkaline Diet - which dates back to the 20th century - is
grounded in the notion that the higher the acid levels of bodily fluids, the more
susceptible the body is to various illnesses. Some of these include urinary tract
infections, kidney stones, and osteoporosis due to the fact that acid in the body
leads to a weakening of the bones. By avoiding foods such as meats, cheese, and
others that contribute to higher levels of acid ash in the body, people can
improve their overall health and restore their acid / alkaline balance. In doing so,
however, the Alkaline Diet proposes dietary and lifestyle changes that, although
different from what the average American is used to, provide a world of benefit.
One of the overarching benefits of making sure that your body achieves a
neutral state in terms of that balance is the fact that you are less likely to suffer
from some debilitating diseases. These include chronic illnesses, fatigue, and the
harmful effects that are associated with weight gain. When the body has
neutralized the pH levels in the blood - which is the ideal result of the Alkaline
Diet - minerals such as calcium and magnesium are pumped into the
bloodstream. This in turn works to strengthen bones and teeth, from which the
body would take minerals when acid levels become too high. The Alkaline Diet
thus promotes overall health and strength of many important components of our
bodies.
Another excellent benefit of the Alkaline Diet is the restoration of energy
levels. Those who have too much acid in their bodies and subsequently gain
weight are subject to fatigue and a lack of energy. Increasing the amount of
alkaline-forming foods that we consume can help boost our immune system,
kick our energy levels into high gear, and restore some of that pep that will help
our bodies fight against disease and other illnesses. And since yeast thrives in
environments that are rich in acid, those that go on the Alkaline Diet are
therefore less at risk for developing yeast infections.
Though there are not as many medical tests and research proving the
positive effects of the Alkaline Diet on the body, those benefits that we do know
about are substantial enough to make the diet a reasonable contender. If
anything, you will improve your bone health and boost your energy levels to a

Alkaline Diet Zucchini Casserole
INGREDIENTS: 2 or 3 zucchini, thinly sliced
2 large tomatoes, sliced
1 large sweet onion, sliced
2 cups shredded sharp Cheddar cheese
1 cup croutons (any flavor) INSTRUCTIONS: •Take a 9 inch baking tray and
spray it. Pre-heat the oven to 375 degrees Fahrenheit.
•Layer the zucchini, tomato and onion in the tray and sprinkle it with salt and
pepper.
•Repeat the layering.
•Top it with a layer of cheese and croutons.
•Cover the baking tray with a foil and place in oven for around 40 minutes.
•Remove the foil and place in the oven to brown the top a little.
•The casserole is ready to be relished.
Alkaline Diet Artichoke Casserole
INGREDIENTS:
1 clove garlic
Minced 1/4 cup chopped scallions 2 tbsp parsley
1/4 cup olive oil
1 rounded tbsp flour
3/4 cup milk
13 3/4 ounce can of artichoke hearts, chopped 1/2 cup shredded sharp
Cheddar cheese 1/2 cup grated Parmesan cheese INSTRUCTIONS:
•Sauté onions, garlic and parsley in oil.
•Add the flour and slowly pour in the milk and stir simultaneously.
•Fold in the artichoke hearts.
•Transfer the mixture to a 2-quart casserole and top with cheese.
•Pre-heat the oven to 325 degrees Fahrenheit.
•Place the casserole tin in the oven and bake for around 15-20 minutes.
Alkaline Diet Asparagus-Nut Casserole
INGREDIENTS:
4 tbsp butter
4 tbsp flour
1 tsp salt
1/4 tsp pepper
2 cups milk
2 medium cans asparagus, drained 1 1/2 cups grated cheese 1/2 cup slivered
almonds Cracker crumbs
4 tbsp butter
INSTRUCTIONS:
•For the sauce, melt the butter and add salt, pepper and flour until blended.
•Layer first with asparagus, half the cheese, half the almonds and the sauce.
•Repeat the layering.
•Sprinkle with the crumbs and a little butter.
•Pre-heat the oven to 375 degrees Fahrenheit.
•Place the casserole tin in the oven and bake for around 25 minutes.
Alkaline Diet Asparagus Casserole
INGREDIENTS:
2 tablespoons butter
2 tablespoons flour
2 tablespoons asparagus juice 1 cup whipping cream
1/2 cup grated cheese (Colby or Cheddar) 1 small can mushrooms
2 cans asparagus
Ritz cracker crumbs
Salt and pepper to taste
INSTRUCTIONS:
•For the sauce, melt the butter in a saucepan and gradually add the flour, and stir.
•Add the asparagus juice making a paste.
•Pour the cream, constantly stirring, until it is thick.
•Add salt and pepper. Then add the cheese.
•Stir until it is dissolved and add the mushrooms.
•Pre-heat the oven to 350 degrees Fahrenheit.
•Line the base of the casserole with one can of asparagus and top it with the
sauce.
•Add another layer of another can of asparagus and top with the cracker crumbs.
•Place the casserole tin in the oven and bake for around 20 minutes.
Alkaline Diet Cheesy Asparagus Casserole
INGREDIENTS: 10 to 12 ounce frozen asparagus cut into 1-inch pieces
2 cups soft white bread crumbs
1/4 pound coarse shredded cheddar cheese
2 tbsp pimento, cut into 1/2-inch strips
1 tsp salt
1 tsp dried basil, crushed
1/4 tsp onion salt
1/4 tsp black pepper
12 ounce can of MILNOT combined with 2 tablespoons butter
3 well-beaten egg yolks
3 egg whites, beaten stiff INSTRUCTIONS: •Cook the asparagus in 1/4 cup hot
water with 1/2 teaspoon salt just.
until tender for around 7 to 8 minutes.
•In a bowl, add the drained asparagus, bread crumbs, pimento, cheese and
seasonings.
•Heat the MILNOT and butter and add to the eggs that are beaten.
•Pour it into the vegetable mixture and blend well.
•Pre-heat the oven to 350 degrees Fahrenheit.
•Butter the casserole and pour in the mixture into it.
•Place the casserole in a pan of hot water and bake in the oven for 40 to 50
minutes.
Alkaline Diet Cream Corn Casserole
INGREDIENTS:
1/2 cup butter, melted 2 eggs, beaten
8 ½ ounce dry corn bread mix 15 ounce can of whole kernel corn, drained 14
¾ ounce can of cream style corn 1 cup sour cream
INSTRUCTIONS:
• Pre-heat the oven to 350 degrees Fahrenheit.
•Grease a 9 by 9 inch casserole dish.
•Mix butter, eggs, corn bread mix, sour cream and corn in a bowl.
•Mix well and pour it into the casserole dish.
•Bake for around 45 minutes until the top is golden brown
Alkaline Diet Baked Chile Casserole
INGREDIENTS:
4 cups fresh corn kernels or frozen, thawed and drained
1 cup grated Cheddar cheese
8 ounces cream cheese at room temperature
7 ounce can diced green chillies
2 tsp chilly powder 2 tsp cumin
INSTRUCTIONS:
•Pre-heat the oven to 350 degrees Fahrenheit.
•Grease a one and a half quart baking dish.
•Combine all the ingredients in a large bowl.
•Mix well and pour it into the baking dish.
•Bake for around 30 minutes until bubbling.
Alkaline Diet Black Bean Casserole
INGREDIENTS:
1 cup chopped onions
3/4 cup yellow cornmeal
2 teaspoons chilly powder
1 cup evaporated skim milk
1/4 cup water
16 ounce can whole kernel corn, drained 16 ounce can black beans, drained
and rinsed 16 ounce can stewed tomatoes
4 ounce can diced mild green chillies INSTRUCTIONS:
•Pre-heat the oven to 350 degrees Fahrenheit.
•Spray a 8 inch baking dish with a non-sticky spray.
•Combine all the ingredients in a large bowl.
•Mix well and pour it into the baking dish.
•Bake uncovered for around 45 minutes.
Alkaline Diet Vegetable Casserole
INGREDIENTS:
1 package frozen vegetables
1 can cream of vegetable soup
1 can cream of celery soup
1 cup chow mein noodles
INSTRUCTIONS:
•Pre-heat the oven to 325 degrees Fahrenheit.
•Combine all the ingredients in a large bowl, except leave a quarter cup of
noodles.
•Sprinkle the remaining noodles on top and refrigerate the mixture for an hour.
•Later bake uncovered for around 30 minutes.
Alkaline Diet Broccoli Casserole
INGREDIENTS:
2 boxes frozen broccoli, chopped, cooked and drained 1/2 cup butter
4 tablespoons flour
4 vegetable bouillon cubes 2 cups milk
Dressing:
1/2 bag Pepperidge Farm stuffing crumbs 1/2 cup boiling water
2 tablespoons butter
Nuts
INSTRUCTIONS:
•Pre-heat the oven to 350 degrees Fahrenheit.
•Melt the butter and add the crumbled bouillon cubes.
•Add flour and milk and cook until thick.
•Place crumbs into a bowl.
•Melt butter in water and pour over the crumbs.
•Add some nuts and toss.
•Place the broccoli at the bottom of the buttered baking dish.
•Pour over the cream sauce.
•Layer with the stuffing and sprinkle with more nuts •Bake uncovered for 30
minutes.
Alkaline Diet Broccoli Cauliflower Casserole
INGREDIENTS:
1 pound frozen broccoli
1 pound frozen cauliflower
1 can cream of mushroom soup
1 small jar Cheez Whiz
1 small can French-fried onions INSTRUCTIONS:
•Pre-heat the oven to 325 degrees Fahrenheit.
•Place the cauliflower and broccoli in a baking dish.
•Heat the soup and Cheez Whiz on a pan.
•Pour it over the cauliflower and broccoli.
•Bake for 40 minutes.
•Sprinkle the onions over during the last 15 minutes of baking.
Alkaline Diet Broccoli Rice Casserole
INGREDIENTS: 4 tbsp margarine or butter
1 cup finely chopped celery
1 cup finely chopped onion
1 large bell pepper, finely chopped
4 cups cooked rice
2 packages chopped broccoli, cooked
8 ounce jar Cheez Whiz
2 cans undiluted cream mushroom
Garlic, salt and pepper, to taste INSTRUCTIONS: •Sauté the onions, celery and
bell pepper in margarine.
•Add the rice, Cheez Whiz, broccoli and soup.
•Mix well and add salt, garlic and pepper.
•Grease a 3 quart casserole.
•Transfer the mixture to the casserole.
•Bake for 45 minute to an hour at 350 degrees Fahrenheit.
Alkaline Diet Brussel Sprouts Casserole
INGREDIENTS:
2 cups cooked white rice
2 tablespoons butter
10 ounce package frozen Brussels sprouts 1/2 cup chopped onion
1/2 teaspoon salt
1/8 teaspoon pepper
10 ounce cream of celery soup 1/4 cup milk
1/2 cup shredded cheddar cheese INSTRUCTIONS:
•Cook the rice.
•Once the rice is cooked, stir the butter in to melt.
•Thaw the Brussels sprouts.
•Place the rice in a 2 quart casserole and fluff it with a fork.
•Top with Brussels sprouts.
•Combine the soup with the milk and pour over the mixture in the casserole tin.
•Sprinkle the cheese and season with salt and pepper.
•Bake for 35 minute at 350 degrees Fahrenheit.
Alkaline Diet Sweet Potato Butterscotch Casserole
INGREDIENTS:
3 sweet potatoes
1 1/2 cups granulated sugar 3 large eggs
1/4 cup butter
1/2 cup milk
3 ounce box instant butterscotch pudding INSTRUCTIONS:
•Boil the sweet potatoes, drain and mash.
•Mix all the ingredients in a bowl.
•Place in a greased casserole dish.
•Bake for at 325 degrees Fahrenheit till firm in the centre.
Alkaline Diet Cabbage Casserole
INGREDIENTS:
1 cabbage, shredded
1 onion, chopped
6 tablespoons butter
10 3/4 ounce can cream of mushroom soup 1 cup Velveeta or shredded
cheddar cheese Salt and pepper to taste
1/4 cup bread crumbs
INSTRUCTIONS:
•Boil the sweet cabbage, drain and set aside.
•Sauté the onions in five tablespoons of butter.
•Add the soup and later cheese until it melts.
•Add the cabbage, salt and pepper.
•Place in a 10 by 6 baking dish.
•Melt the remaining butter and add the crumbs and cook till light brown.
•Pour over the cabbage and bake for 20-30 minutes at 350 degrees Fahrenheit.
Alkaline Diet California Rice Casserole
INGREDIENTS:
1 cup onion, chopped
1/4 cup butter
4 cups cooked rice
2 cups sour cream
1 cup cottage cheese
1 bay leaf
1/2 teaspoon salt
1/8 teaspoon pepper
3 small cans green chillies, drained 2 cups Cheddar cheese, grated Parsley,
chopped
INSTRUCTIONS:
•Sauté the onions in butter.
•Remove from the heat and add rice, sour cream, cottage cheese, salt pepper and
bay leaf and stir.
•Layer half the rice mixture in a greased baking dish and add half the chillies
covered with a cup of cheese.
•Repeat the layering.
•Bake for 30 minutes at 375 degrees Fahrenheit.
•Sprinkle with parsley.
Alkaline Diet Carrot Cracker Casserole
INGREDIENTS:
2 pounds carrots
1/3 cup brown sugar
1/2 cup butter or margarine 1/4 pound Velveeta cheese 12 Ritz crackers,
crushed INSTRUCTIONS:
•Slice the carrots and boil for 10 minutes and drain.
•Place in a casserole dish and cover with the brown sugar.
•Melt the Velveeta and butter and pour over the carrots.
•Top with the crushed crackers.
•Bake for 30 minutes at 350 degrees Fahrenheit.
Alkaline Diet Cheddar Parmesan Potatoes
INGREDIENTS:
1/4 cup butter or margarine
1/4 cup all-purpose flour
2 cups milk
1/2 tsp salt
1 cup shredded Cheddar cheese
1/2 cup Parmesan cheese
5 cups sliced, cooked and peeled potatoes 1/4 cup bread crumbs
INSTRUCTIONS:
•On low heat, melt the butter and stir in the flour until smooth.
•Slowly add the milk and stir over medium heat until the mixture thickens.
•Remove from the heat and add the cheese and salt.
•Place potatoes in a buttered baking dish and add the prepared mixture.
•Sprinkle the crumbs on top.
•Bake uncovered for 30 minutes at 350 degrees Fahrenheit.
Alkaline Diet Parmesan Carrot Casserole
INGREDIENTS:
8 cups sliced Carrots
1 small onion, chopped
1 tablespoon margarine
10 3/4 ounce can cream of mushroom soup 3/4 cup grated Parmesan cheese
1/2 cup breadcrumbs
INSTRUCTIONS:
•Boil the carrots in water until tender and then drain.
•Sauté onions in butter in a skillet.
•Mix the carrots, onion, soup and cheese.
•Transfer the mixture to a baking dish.
•Sprinkle the crumbs on top.
•Bake uncovered for 30 minutes at 350 degrees Fahrenheit.
Alkaline Diet Cayenne Eggplant Casserole
INGREDIENTS: 1 medium eggplant
3/4 cup soft breadcrumbs
2 tbsp butter
2 tbsp flour
1 cup milk
2 tsp grated onion
1 tsp catsup
1 tsp salt
1/2 tsp pepper
Dash of cayenne
1/2 tsp Worcestershire sauce
6 ounces American or Cheddar cheese, cut into small pieces
2 eggs, slightly beaten INSTRUCTIONS: •Peel the eggplant and dice it. Steam
until tender.
•Toss with breadcrumbs in a bowl.
•Melt butter in a saucepan and stir in the flour.
•Add milk and stir until thickened.
•Add the onions, catsup and other seasonings.
•Add the cheese and cook until melted.
•Add the eggs to the sauce, constantly stirring.
•Mix the sauce with the eggplant mixture and transfer the greased baking dish.
•Bake uncovered for 45 minutes at 350 degrees Fahrenheit.
Alkaline Diet Homestyle Green Pea Casserole
INGREDIENTS: 10 3/4 ounce can cream of mushroom soup
1/2 cup milk
1 teaspoon soy sauce
1 dash black pepper
4 cups cooked cut green beans
1 1/3 cups French fried onions, divided INSTRUCTIONS: •Mix the soup, soy
sauce, milk, beans, black pepper and 2/3 cups onion.
•Pour in a casserole tin.
•Bake for 25 minutes at 350 degrees Fahrenheit or till the mixture is bubbling.
•Add the remaining onions and bake for 5 minutes.
Alkaline Diet Southern Cornbread Casserole
INGREDIENTS:
1 large onion, chopped
1/2 cup butter
2 tablespoons milk
2 large eggs 2
8.5 ounce of Jiffy corn muffin mix 14.75 ounce cans cream-style corn 4
ounce can diced green chillies, drained Chopped pimentos to taste, optional 8
ounce carton sour cream
1 1/2 cups shredded sharp Cheddar cheese INSTRUCTIONS:
•Cook butter and onion in a saucepan over medium flame until the onion is
browned.
•In a bowl, mix eggs, corn muffin mix, creamed corn, chillies and pimentos.
•Transfer the mixture into a baking dish and top with the fried onions.
•Add sour cream through the mixture in the baking pan and sprinkle with cheese.
•Bake for 35 minutes in an oven set at 425 degrees Fahrenheit.
Alkaline Diet Creamy Celery Casserole
INGREDIENTS:
4 cups sliced celery
1/2 teaspoon salt
1 (2 1/2 ounce) package slivered almonds 1 (8 ounce) can sliced water
chestnuts, drained 1 (3 ounce) can sliced mushrooms, drained 5 tablespoons
margarine
3 tablespoons flour
1/2 cup milk
1 cup vegetable broth
1/2 cup Parmesan cheese
1/2 cup crushed Ritz Crackers INSTRUCTIONS:
•Boil the celery in a small amount of water with salt for 5 minutes and drain.
•Combine the celery, almonds, water, chestnuts and mushrooms.
•Melt half the quantity of margarine and blend in flour on medium flame.
•Add the vegetable broth and milk, and cook till thick •Mix it with the celery
mixture.
•Transfer to a buttered square casserole dish.
•Top with cheese and crumbs.
•Bake for about 30 minutes until bubbly in an oven set at 350 degrees
Fahrenheit.
Alkaline Diet Crispy Cashew Casserole
INGREDIENTS:
1 stalk celery, sliced
1 large carrot, scraped and shredded 1 medium onion, chopped
1 cup fresh mushrooms, sliced
Vegetable cooking spray
1 cup cashews, coarsely chopped
8 ounces canned water chestnuts, drained and sliced 1 (10 1/4 ounce) can
cream of mushroom soup, undiluted 1 1/4 cups water
1/8 teaspoon ground black pepper
5 ounces chow mein noodles, divided INSTRUCTIONS:
•Cook the celery, carrots, onion and mushrooms until tender in a nonstick skillet
covered with vegetable spray, stirring constantly.
•Add the cashews, chestnuts, mushroom soup cream and water stirring until
blended.
•Stir in one cup of the noodles.
•Transfer the mixture to the casserole dish and sprinkle with the remaining
noodles.
•Bake for about 20 minutes in an oven set at 350 degrees Fahrenheit.
Alkaline Diet Quick & Easy Spinach Casserole
INGREDIENTS:
10 ounce package frozen chopped spinach 1 envelope dry onion soup mix 1/4
cup margarine
1 cup sour cream
1/2 cup grated Parmesan cheese INSTRUCTIONS:
•Cook the spinach according to the package directions and drain.
•Add all the ingredients to the cooked spinach and mix well.

1/2 teaspoon salt
1/8 teaspoon ground pepper
Mushroom Sauce:
2 1/2 tablespoons cornstarch
1 1/2 cups vegetable broth, divided 1 tablespoon soy sauce
1 (4 ounce) can drained, sliced mushrooms 2 tablespoons sliced green onions
INSTRUCTIONS:
•Mix all the casserole ingredients and pour into a greased baking dish.
• Bake for about 35 minutes in an oven set at 350 degrees Fahrenheit.
•For the sauce, combine the cornstarch with a quarter cup broth and place aside.
•Boil the remaining broth and gradually whisk in the cornstarch mixture and the
soy sauce.
•Cook stirring continuously until thickened and smooth and add the mushrooms
and green onions.
•For serving cut the casserole into pieces and top with the sauce.

10 ounce package frozen chopped spinach 1 envelope dry onion soup mix 1/4
cup margarine
1 cup sour cream

•Chop the eggplant, cook and drain.

2 (7 ounce) cans green chillies, seeded 1/2 pound Cheddar cheese, grated 1/2
pound Monterey jack cheese, grated 2 cups evaporated milk 4 eggs

•In a baking dish, spread a layer of green chillies, Cheddar cheese and Monterey
cheese.
•Place in the evaporated milk, eggs, flour, and salt in a blender and blend.

INGREDIENTS:
8 potatoes, coarsely mashed 1/4 cup butter
2 cups shredded Cheddar cheese 1 tsp salt
1/3 cup chives
1 pint sour cream
1/8 tsp pepper

•Melt the butter and cheese in a pan.
•Remove from flame and add the sour cream, chives, pepper and salt.
•Place the mixture into the mashed potatoes and fold.
•Placed into a greased casserole.

•Remove from oven, sprinkle more grated cheese and return to the oven until

1 1/2 cups granulated sugar 1/2 cup milk
3 cups grated raw sweet potatoes 2 eggs

3/4 cup buttermilk
1/8 tsp baking soda

•Combine the sugar and milk in a bowl and add the grated potatoes.

1/2 cup milk
3 eggs

INGREDIENTS:
32 ounces frozen carrot, broccoli, and cauliflower blend
1 can cream of mushroom soup
1 small jar Cheese Whiz
1 cup chow mein noodles
INSTRUCTIONS:
•Cook the vegetables according to the package directions for half the amount of
time.
•Place the cooked vegetables in a greased casserole tray.
•Blend and heat the soup and Cheese Whiz in a saucepan.
•Pour this mixture over the veggies and mix.
•Bake for about 25-30 minutes in an oven set at 375 degrees Fahrenheit.
•Top with the noodles during the last 5 minutes of baking time.

INGREDIENTS: 2 pints cherry tomatoes
1/4 cup red onion, chopped fine
1 can cream of mushroom soup
3/4 cup sour cream
2 tsp minced
Handful of parsley
Handful of pine nuts
1 tsp dry oregano or Italian seasoning
Salt and pepper to taste
1/2 cup fresh grated Parmesan cheese
4 tablespoons butter or margarine, melted
1 cup Italian bread crumbs INSTRUCTIONS: •Spread a layer of cherry
tomatoes evenly in a casserole dish.
•Sprinkle with the finely chopped onion.
•In a bowl, mix mushroom soup, sour cream, garlic, parsley, pine nuts, salt,
pepper and grated cheese.
•Spread the mixture over the tomatoes.
•Combine the bread crumbs and melted butter and spread over the mixture.
•Bake for about 35-40 minutes in an oven set at 350 degrees Fahrenheit.

8 large potatoes
3 large onions
Oil for frying
6 jalapeno peppers, thinly sliced 1 pound Monterey jack cheese, shredded

INGREDIENTS:
9 ounce package frozen French-style green beans 3 tablespoons butter or
margarine
10 3/4 ounce can cream of mushroom soup, undiluted 3 ounces cream
cheese, softened
1 teaspoon dried onion flakes
8 ounce can sliced water chestnuts, drained 1/4 teaspoon garlic salt
1/4 teaspoon ground black pepper
1 1/2 cups shredded Cheddar cheese
2 1/2 ounce package slivered almonds
Paprika
INSTRUCTIONS:
•Cook the green beans according to the package directions and drain.
•Melt the butter in a pan and add soup and cream cheese.
•Cook over low flame attiring continuously until cream cheese is melted and the
mixture is smooth.
•Remove from the heat and add green beans, water chestnuts, onion, garlic, salt,
pepper and cheese.
•Transfer the mixture into a greased casserole tin and top with almonds and
sprinkle with paprika.
•Bake uncovered for about 45 minutes in an oven set at 375 degrees Fahrenheit.

INGREDIENTS:
3 jumbo yellow onions, sliced 2 tbsp butter
10 3/4 ounce can cream of vegetable soup 1/2 soup can milk
1 tsp soy sauce
1/2 pound Swiss cheese slices Pepper
French bread
2 tbsp butter
INSTRUCTIONS:
•Sauté the sliced onions in butter on low flame and place in a glass baking dish.
•Whisk together the vegetable soup, milk and soy sauce and pour over the
onions.
•Cover with the cheese slices and sprinkle pepper.
•Top with a sliced buttered French bread.
•Bake for about 35 minutes in an oven set at 350 degrees Fahrenheit.

INGREDIENTS: 1 (10 ounce) package frozen lima beans
1 can Cheddar cheese soup
1/2 cup milk
3/4 cup chopped celery
1/4 cup chopped parsley
1 (3 ounce) can French-fried onion rings, divided INSTRUCTIONS: •Cook the
lima beans and drain.
•Combine the lima beans soup, celery, milk and parsley.
•Mix in a portion of the onion rings.

2 tsp ground coriander
1 tsp ground cumin

Chopped fresh parsley
4 zucchini, unpeeled and sliced 3 large onions, peeled and sliced 3 large bell

•For the seasoning, mix coriander, cumin, garlic, bay leaf, salt and pepper in a
bowl.
•Place a layer of eggplant in a baking dish.
•Sprinkle with some seasoning, a little oil and some parsley.
•Top with the zucchini, then green peppers, tomatoes and onions, sprinkling
some seasoning, oil and parsley over each layer.
•Bake covered for about 30 minutes in an oven set at 400 degrees Fahrenheit.
•Bake uncovered for 30 minutes until vegetables are tender.

INGREDIENTS:
1 onion, chopped
1/4 cup butter
8 ounces fresh mushrooms, sliced 2 packages frozen spinach
8 ounces sour cream
14 ounce can artichoke hearts, quartered 1/2 cup Parmesan cheese
INSTRUCTIONS:
•Sauté onions in butter.
•add the mushrooms and sauté.
•Squeeze the thawed spinach to remove water.
•Combine the spinach, onion, mushrooms, sour cream and artichoke hearts and
place in a casserole dish.
•Top with Parmesan cheese.
•Bake for 40-50 minutes at 350 degrees Fahrenheit.
Alkaline Diet Tomato & Potato Casserole
INGREDIENTS:
1/4 cup olive oil
2 large potatoes, sliced
2 small red bell peppers, sliced 1/2-inch thick 2 large ripe tomatoes, sliced 2
tsp minced garlic
1/2 tsp each salt, pepper and oregano INSTRUCTIONS:
•Spread olive oil over a baking dish.
•Layer half the potatoes, top with a cup of sliced tomatoes and a cup of red
peppers.
•Drizzle with a tablespoon of oil, 1 tsp garlic, and a ¼ tsp of salt, pepper and
oregano.
•Repeat the layering.
•Top with Parmesan cheese.
•Bake uncovered for 50 minutes to an hour at 375 degrees Fahrenheit.
Alkaline Diet Turnip Casserole
INGREDIENTS:
1/2 pound turnips, peeled and thinly sliced 2 tbsp butter
1 onion, thinly sliced
2/3 cup chopped green bell pepper 1/3 cup chopped celery
2 tbsp flour
1 cup milk
1/2 cup grated sharp cheese
Salt and pepper, to taste
3 tbsp bread crumbs
INSTRUCTIONS:
•Boil the turnips in salted water.
•Sauté onions, green pepper and celery until tender in butter.
•Add flour and cook for a minute.
•Add milk and stir until it thickens.
•Stir in cheese, pepper and salt.
•Combine the turnips with the sauce and place in a baking dish topped with
crumbs.
•Brown it under a broiler.
Alkaline Diet Veggie Burrito Casserole
INGREDIENTS:
2/3 cup rice
1/2 tsp vegetable broth
1 large green bell pepper, diced 1 onion, chopped
10 ounce frozen corn, thawed, drained 1 cup salsa-style catsup
1 cup Monterey jack cheese, shredded 8 (8-inch) corn tortillas
16 ounce can refried beans
1/2 cup sour cream
1 tsp chopped cilantro
INSTRUCTIONS:
•Cook the rice without adding butter or salt.
•In a nonstick pan, heat the vegetable broth on medium flame until hot.
•Add onion and green pepper and cook until tender.
•Remove from the flame and add corn and ½ cup catsup.
•Stir the cooked rice and cheese into the mixture.
•Spread a ¼ cup refried beans on each tortilla and add ½ cup of the rice mixture
and roll up to enclose the filling.
•Place the tortillas in a glass baking dish and cover with the remaining catsup,
cilantro and sour cream.
•Bake covered in a preheated 400 degree Fahrenheit oven for around 30 minutes.
Alkaline Diet Veggie Tortilla Casserole
INGREDIENTS:
2 tbsp vegetable oil
4 medium zucchini, thinly-sliced 1 green bell pepper, chopped 1 onion,
chopped
1 can green chillies, diced 1 1/2 cups Monterey jack cheese 1/2 teaspoon
cumin
2 tbsp flour
2 cups sour cream
6 corn tortillas, each cut into 8 wedges 1 1/2 cups American cheese
INSTRUCTIONS:
•Heat oil in a deep pan.
•Add vegetables and cook for around 8 minutes and then stir in the chillies and
cumin.
•Add flour and 1 cup of sour cream and mix.
•Layer tortillas, ½ the veggies, ½ the remaining sour cream and ½ the cheese in
an oblong casserole.
•Repeat layering.
•Bake uncovered at 350 degrees Fahrenheit oven for around 30 minutes.
Alkaline Diet Vidalia Onion Casserole
INGREDIENTS:
5 large onions (Vidalia, if possible) 1/2 cup margarine
½ cup Parmesan cheese
Crispy buttery crackers
INSTRUCTIONS:
•Slice the onion into thin rings and sauté in margarine.
•Place half the onions in a casserole dish.
•Cover with Parmesan cheese and top with crushed crackers.
•Repeat layering.
•Bake uncovered at 325 degrees Fahrenheit oven for around 30 minutes.

INGREDIENTS:
16 ounce package frozen broccoli 16 ounce package frozen cauliflower 4 ½
ounce jars button mushrooms, drained 1 can cream of mushroom soup
8 ounce jar process cheese spread 2 ½ ounce can onion rings
INSTRUCTIONS:
•Cook the cauliflower and the broccoli in a microwave until almost done.
•Drain the water and add mushrooms.
•Stir the cheese spread in the soup and pour over the vegetables.
•Top with the onion rings.
•Bake at 350 degrees Fahrenheit oven for around 20-30 minutes.
Alkaline Diet Coconut Yam Casserole
INGREDIENTS:
1 pound yams
1/2 cup unsalted butter 1/2 cup Coco Casa Cream of Coconut 1/4 cup heavy
cream
3 egg yolks
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
2 dozen marshmallows
½ tsp ground cinnamon
INSTRUCTIONS:
•Boil the yams and peel while hot.
•Transfer to a bowl and mix with butter, coconut cream, heavy cream, egg yolks
and spices and whip.
•Place in a casserole tin.
•Put marshmallows in the mixture and sprinkle lightly with cinnamon.
•Bake at 350 degrees Fahrenheit oven for around 30 minutes.
Alkaline Diet Fiery Rice & Bean Casserole
INGREDIENTS:
1 tbsp olive oil
1/2 cup water
1 large onion, chopped
2 cloves garlic, minced
1 1/2 cups sliced fresh mushrooms 2 green bell peppers, chopped 3/4 cup
uncooked rice
2 (16 ounce) cans kidney beans, undrained 1 (16 ounce) can whole peeled
tomatoes, undrained Chilly powder, to taste
Few drops red pepper sauce (optional) 1 cup low-fat mozzarella cheese
INSTRUCTIONS:
•In a skillet, heat oil and add onions, garlic, mushrooms and peppers stirring
often for about 10 minutes.
•Add the rice, tomatoes, beans, chilly powder and hot sauce, cover and simmer
for about 25 minutes or until rice is tender and most liquid absorbed.
•Transfer to the baking dish and sprinkle with cheese.
•Bake at 350 degrees Fahrenheit oven for around 15 minutes.

INGREDIENTS:
1/4 cup butter
3 medium zucchini, sliced 1/8 teaspoon garlic powder 4 medium tomatoes,
