Overall, the largely mechanical process encompasses eight main
steps, beginning with harvesting olives from trees and ending
with transporting the final products to stores.
In the first stage, workers use rakes to collect olives from trees,
after which the olives are stored in vats for a period of two to
three days. Following storage, the olives undergo the washing
step with cool water. The fourth stage involves a crushing
mechanism where cylindrical hammers break down the cleaned
olives into two products: olive stones which are stored in a
container and olive paste which is channeled through a pipe
line to the next stage.
The latter half of the procedure begins with the olive paste
being subjected to pressure and filtration by a hydraulic press to
produce initial olive oil. This liquid then goes through spinning
and separating process where it is spun in a centrifuge to
remove remaining water. The pure water is subsequently
bottled on a production line before being loaded onto trucks,
ready for transportation to retail stores.
