PRODUCT PROFILE
The major products and services in this industry are:
y

Red wine Red Wine is made from the must (pulp) of red or black grapes that undergo fermentation together with the grape skins. White wine White wine is made by fermenting juice which is made by pressing crushed grapes to extract juice; the skins are removed and play no further role. Occasionally white wine is made from red grapes; this is done by extracting grapes juice with minimal contact with their skins. Sparkling wine Sparkling wine is a wine with significant levels of carbon dioxide. A classic example of a sparkling wine is Champagne. There are two levels of fermentation involved in making sparkling wine. It is the initiation of a secondary fermentation that distinguishes sparkling wine production and gives the wine bubbles. Vermouth wine - Vermouth is a fortified wine type. It can be red or white wine that has been flavoured by the addition of herbs and barks like cardamom, cinnamon, marjoram and chamomile. It is used primarily as premeal appetiser. Rose wine Rose wine is made from red grapes where the juice is allowed to stay in contact with the dark skins long enough to pick up a pink colour.

PRODUCTION PROCESS

Grape Harvest: Winemaking commences with the annual grape harvest which can be accomplished by mechanical Crushing:After the grapes are harvested they are crushed and de-stemmed. The objective of crushing is not necessarily to squeeze all the juice out of the grape, but to split the external skin and allow the juice to start its run. Crushing can happen in two ways by mechanical means with a heavy spiralled steel roller or in grape stomps.

Fermentation:It is during fermentation that the grapes sugars are converted to alcohol. The process of red wine fermentation typically takes place in stainless steel tanks, large vats and oak barrels. White wine fermentation often takes place in stainless steel tanks with lower heat levels that are closely monitored, with the oxygen level strictly guarded. During fermentation the enrichment may be added to the winemaking process to increase the alcohol levels or acidification may be added to the process if acidity is low. Occasionally, wine may undergo secondary fermentation to give bubbles to the wine.

17 | P a g e

Maturation: The fermented wine is stored in oak barrels or steel tanks for weeks or months for maturation. Oak offers protection and impacts flavour. Steel tanks are becoming increasingly popular as they are inert, economical and easy to maintain.

Filtration: Filtration is the process of removing bigger solids like dead yeast cells and other particles, so that the wine is no longer cloudy, but bright and clear, as a consumer would expect.

Bottling: The wine bottle is slowly filled and topped with either nitrogen or carbon dioxide to displace any oxygen. The bottles are then capped with either a traditional cork or a modern screw cap. Finally, all the wine bottles are labelled and cased for distribution to the customers.

Recommendations
Despite of countrys vast population consumption of wine remains extremely low so it is expected to increase the huge potential for growth of sales in coming years. Various factors such as favourable govt policies ,increasing disposable income, amplified wine marketing of western culture are helping to drive indias wine consumption. Policies by state level government are encouraging domestic wine producers to set up there own wineries in country, giving a boost to the domestic industry. Wanting a shampagne that would be affordable to the average person.
