Put around 4-5 table spoons of sugar for half kilo carrot (or as per taste) 4. Once the water in the carrot dries off put sum ghee, and stir them. Let the carrot reduce in content. add half cup of milk to cook it a lil more, den fry nuts in ghee and crush 2-3sum cardamom and add, a pinch of salt at last ... dis is the way I make it... II) Gajar (Carrot) Halwa also known as gajrala is a traditional Punjabi dessert made with carrots and milk. Gajar Halwa is delicious warm or cold. Recipe serves 4 Ingredients:

2 cups shredded carrots 2 cups milk 3 tablespoons unsalted butter 1/4 cup sugar 1/2 teaspoon cardamom powder 6 chopped roasted cashew nuts (To garnish)

Method: 1. Roast the cashew nuts and set aside for the garnish. 2. Boil the milk on medium-high heat in a non-stick pan until it is reduced to about to 1 cup. Stir often to ensure the milk does not burn in the bottom of the pan. Set aside. 3. Melt the butter in a frying pan on medium heat. 4. Add the shredded carrots and stir-fry for about seven to eight minutes. 5. Carrots should be tender and slightly changed in color. 6. Add the milk and cook until the milk dries. This will take about eight to ten minutes. 7. Next add the sugar, and cardamom powder and stir-fry for another three to four minutes until the halwa starts to leave the side of frying pan. 8. Garnish with cashew nuts.

Gajar Ka Halwa

Ingredients:

5 cups milk 1 tin sweetened condensed milk 3/4 kg carrots 1-2 tbsp sugar 2 tsp ghee or butter 50g nuts/raisins Method: 1. Grate the carrots, add to the milk and bring to a boil. Cook on slow fire stirring occasionally, till milk dries up. 2. Add condensed milk and sugar. Cook on slow fire till dry (for about 25 to 30 minutes) stirring occasionally. 3. Add ghee and cook for another 10 minutes. 4. Garnish with nuts, raisins and serve hot. Serves: 10 Preparation time: 45-50 minutes Moist Chocolate cake - eggless
Ingredients: All purpose flour 1 and 1/2 cups Cocoa powder 3 tea spns Baking soda 1 tea spn Salt 1/4 tea spn Water 1 cup Sugar 1 cup Vanilla extract 1/2 tea spn Vinegar 1 tea spn Oil 1/4 cup Method: Mix water, sugar, oil, vanilla and vinegar till the sugar completely dissolves. Sift together flour, cocoa, salt, baking soda. Add the flour mix to the liquid mixture one table spoon at a time. Mix well to form a uniform dough.

Preheat the oven for 10mins at 350F. Grease the oven proof dish or line with a parchment paper. Pour the dough.

Bake in oven at 350F for around 40mins or till a knife inserted comes out clean.

Ginger cake
Ingredients: 1/2 cup butter 1 cup sugar or baking sweetner 1 tbl spn fresh grated ginger 1 cup all purpose flour 2 tea spns baking powder 1 tea spn vanilla extract 1/2 cup milk 2 eggs Method: Preheat the oven at 350 F for about 10mins. Sieve together flour and baking powder, keep it aside. Mix butter and sugar(or sweetener) till they are well mixed. Now add eggs, vanilla extract and mix well till the eggs are mixed. Pour in milk and mix again. Now add the flour-baking powder mixture, a little at a time, mixing it all the time. When everything is incorporated well, add the grated ginger and mix. Grease a baking dish, dust it with some flour. Pour the cake batter into it and bake at 350F for about 40mins or till a knife inserted in the center comes out clean. While serving, dust with some confectioners sugar or decorated it.
