BOOKS -- Recommended Reading "Jack Kennedy: Elusive Hero" by Chris Matthews Reviewed by Larry Cox Although there have been dozens of books written about our 35th president, this one humanizes John F. Kennedy in such a way that he is accessible to many of us, perhaps for the first time. Chris Matthews, host of MSNBC's "Hardball," sifted through the memories of many of JFK's closest friends, including prep-school classmates, war buddies and political associates. The result is an intimate portrait that reveals not the Jack Kennedy you remember or think you know, but the man behind the myth. Most of Kennedy's childhood was spent in and out of infirmaries and hospitals. He was a sick, lonely child who was in bed more often than not, and almost always with a book. He suffered from both Addison's Disease and a back problem for most of his life. Instead of becoming a young athlete, he was an incessant reader. Kennedy was able to join the U.S. Navy during World War II only after passing the physical on his second attempt. He became a young skipper who saved his crew after their PT 109 was chopped in half by a Japanese destroyer. The amazing thing about Jack Kennedy is how he stepped out of the shadows of his father and older brother to become his own man. Against all odds, this big-eared, skinny kid nicknamed "Ratface" overcame all obstacles because of his focus, determination and motivation. He even
challenged the political system of Boston, which ultimately helped pave his path to the White House. As Matthews writes, the Kennedy his research found was "a fighting prince never free of pain, never far from trouble, never accepting the world he found and never wanting to be his father's son." He adds that Kennedy was "a far greater hero than he ever wished us to know." Perhaps this is why he's still remembered with such high regard almost 50 years after his tragic death in Dallas. MCKEAN COUNTY LIVESTOCK CLUB On June 3rd the McKean County LiveStock Club met at the 4-H Center located at the McKean County Fairgrounds in Smethport. The McKean County 4-H Livestock members met countywide for their GPP (Good Production Practice). The discussion was led by Kelly Davis. The club received information on identifying animals, keeping proper records, proper medicine storage, grain mixture, and nutrition and proper feed storage. PAW'S CORNER By Sam Mazzotta Pet Odors: When Funk Attacks DEAR PAW'S CORNER: We bathe and brush our dog "Clint" regularly and wash his bedding, but our apartment still smells kind of funky. Is there any way to totally rid our place of that dog odor? -- Karen in Long Island, N.Y. DEAR KAREN: I'm not sure it's 100 percent possible to completely get rid of pet odors, but you can tackle some common problem areas to minimize the odors. The American Kennel Club recently published some tips to
combat pet odors, especially in hidden areas you might not have thought of: --Wash Clint's bed coverings and blankets every week. --Buy a spare set of bed coverings or blankets to swap out and wash. --Sweep and mop underneath the pet bed and in and around Clint's kennel cage at least once a week. --Cover throw pillows around the house with washable coverings. --Check under furniture or in other spots where Clint hides to make sure he isn't stashing old bones or leftovers there.
--Once a month or whenever they start getting funky, wash Clint's toys with soapy water and let dry completely. --Before vacuuming the house, sprinkle baking soda over the carpet to absorb minor odors. --Wash other textiles more frequently, such as curtains and area rugs, to remove fur and odor. --If Clint has an accident indoors, clean up as quickly as possible, wash the spot with mild soap and water, and blot dry. If odor lingers in that spot, the padding underneath may be affected; air out by lifting the carpet away, or replace that section

THE KITCHEN DIVA By Angela Shelf Medearis Fruit Preserves With a Twist Summer is the season for a variety of beautiful fruits at great prices. If you've purchased more than you can possibly eat, the best thing to do is to preserve the rest. A great way to preserve extra fruit or fruit with bumps, bruises or knots is to make fruit leather. Fruit leathers, sometimes referred to as fruit roll-ups, are believed to have first been developed in the Middle East. Fresh fruit was cooked and mashed. Then the puree was poured onto muslin cloth and put
through a process that allowed the fruit to dry in a thin sheet. The result was a preserved fruit that when dried has a "leathery" appearance that is firm to the touch and lasts a long time. The finished product was cut into shapes and placed into jar for storage. Fruit leather does not require refrigeration and is the perfect snack for long trips. Making your own fruit leather allows you to preserve the fruits of summer and avoid the preservatives or added sugars found in commercially packaged fruit roll-ups. The National Center for Home Food Preservation at University of
Georgia Cooperative Extension has helpful directions for making homemade fruit leather: 1. Use 2 cups of fruit for each 13- by 15-inch fruit leather. Select ripe or slightly overripe fruit, and wash it in cool water. Remove and discard the peel, seeds and stems. Cut the fruit into chunks. Puree the fruit until smooth in a food processor or blender. 2. Add 1/4 cup of unsweetened fruit juice or 2 teaspoons of lemon juice for each 2 cups fruit to prevent darkening. 3. Preheat oven to 140 F. Line a 13- by 15-inch baking pan with rimmed sides or 2 small baking
sheets with rimmed sides with food-safe plastic wrap, being careful to smooth out wrinkles. Do not use waxed paper or aluminum foil. 4. Spread the pureed fruit evenly, using a spatula, until about 1/8-inch thick on the prepared baking pan. Avoid pouring puree too close to the edges of the pan to make it easier to remove. 5. Drying time in an oven is about 6 to 8 hours, depending on the size of the pans used. Larger fruit leathers take longer to dry. NOTE: Fruit leather dries from the outside edge toward the center.
