St. Stevens Day
On St. Stephens Day (the day after Christmas) a procession, known
as The Wren Boy Procession takes place. A pole with a holly bush
would be carried from house to house and families dressed up in old
clothes and with blackened faces. In olden times an actual wren
would be killed and placed on top of the pole.

This custom has to a large degree disappeared but the tradition of


visiting from house to house on St. Stephens Day has survived and is
very much part of Christmas.
Traditional recipe: Baileys Irish

Cheesecake Crust
1/2 cup toasted pecans, cooled and Mix all ingredients
crushed Press into a 10" spring form pan
2 cups chocolate Oreo cookie and up the sides one inch.
crumbs Bake at 325 for 7-10 minute
1/4 cup sugar FILLING
6 tablespoons melted butter Beat cream cheese with electric
Filling mixer until smooth.
2 1/4 lbs cream cheese, at room Beat sugar in gradually, and then
temp add eggs one at a time.
1 2/3 cups sugar Blend in Bailey's and vanilla
5 eggs, at room temp Sprinkle half of chocolate chips
1 cup Baileys Original Irish Cream over crust
1 tablespoon vanilla Spoon in filling
1 cup semi-sweet chocolate chips Sprinkle with remaining chocolate
Coffee Cream Topping chips
1 cup chilled whipping cream Bake at 325 degrees approximately
1 hour and 20 minutes or until
2 tablespoons sugar puffed, springy in center and
1 teaspoon instant coffee powder golden brown. Place a pan of water
chocolate curls or Skor English on bottom rack of oven while
toffee bit, for decoration on top baking to keep it moist.
