Eggs should be stored

preferably inside the refrigerator.


Eggs should be stored away from
possible contaminants, such as raw
meats strong smelling foods.
 Stocks should be rotated : first in first
out.
 Cracked eggs should not be used.
 Preparation surfaces, utensils and
containers should be regulary cleaned
and always cleaned between
preparation.
 Egg dishes should be consumed as soon
as possible after preparation or if not
immediate use, refrigerated.
Cooking egg in the menu of “Egg
Surprize
For the ingredients we have:

 ½ kilo of burger
 ½ cup chopped onions
 1 cup all purpose flour
 1 teaspoon black pepper
 1 teaspoon salt
 2 pieces eggs, beaten
 8 hard-boiled eggs, shelled
 Cooking oil
Procedure:
1.In a large mixing bowl,
combine the burger,
onions, flour, black
pepper, salt and beaten
eggs.
2.Then mix the ingredients
thoroughly, Divide the
mixture into 8 equal
portions.
3. Using wet hands, roll each
portion into a ball.
4.Flatten the ball on your
palm and place the hard –
boiled egg in the centre.
5.Work the mixture up and
around the egg until the egg
is completely enclosed.
6.Fill a deep frying pan one third
full of oil. Place the pan over
moderate heat until the oil is
hot. carefully drop the coated
egg, three or four at a time.
7.Deep fry until golden brown.
8.Transfer the cooked
eggs to a plate or serve
them whole.
9.Serve with catsup or
any sauce of your choice.
Garnish if necessary.
